Descubrí estos amaretti en una tienda de Londres a la que voy de vez en cuando. No tenía la receta sino sólo la lista de ingredientes. Hice algunas pruebas y ya está. Ha funcionado muy bien. Lleva pistacho, cardamomo y un poco de ralladura de naranja y extracto de almendra amarga. Son tan suaves como deberían ser y se conservan bien durante varios días (¿semanas?) en una caja hermética.

A veces lo pido en restaurantes y siempre lo disfruto. Lo importante es utilizar un queso que no esté aguado, y tener el aceite muy caliente para que la corteza de pan rallado se dore bien. Al final, con la mermelada de arándanos, ¡es irresistible!
Qatayef, o atayef (que no debe confundirse con ktayef, hojaldre hecho con cabello de ángel) es un delicioso panqueque relleno de crema ashtalieh, agua de rosas y azahar y pistachos tostados triturados. Todo se sirve con un almíbar aromatizado y da un resultado final no muy dulce. Este pastel se encuentra en el Líbano, pero también en Egipto y otros países del Levante. Esta presentación con la mitad de la tortita doblada para hacer un cono se llama assafiri.
