Una sopa realmente sabrosa y fresca para los días calurosos de verano. Se produce una verdadera alquimia con todos los ingredientes juntos. Los piñones crujientes, la frescura de las hojas de cilantro y la cremosidad de la sopa. Un ingrediente bastante inusual hace su aparición…
¡Así que hay un ingrediente inusual en esta deliciosa sopa! Se llama boursin. Fue idea de mi madre añadir este queso de ajo y hierbas en lugar de nata. No se siente de inmediato y realmente reemplaza la crema… Puedes probarlo con los ojos cerrados.
Receta de «sopa fría de calabacín»:
-3 calabacines medianos -3 cebollas blancas -3 cucharadas de aceite de oliva -500g de agua (¡más si los calabacines son enormes!) -1 cubito de caldo -100g de «boursin ail et fines herbes -Sal, pimienta, tabasco -Coriandro fresco -nueces de pino
Para las nuevas recetas contenidas en mi primer libro, está aquí:
Comience por lavar y limpiar tres cebollas blancas.
Cortar el tallo a unos 5 ó 6 cm del bulbo. Córtalos en trozos pequeños.
Calentar el aceite de oliva en una sartén y freír las cebollas.
Lavar y cortar los extremos de los calabacines. Córtelas en rodajas de 1,5 cm. Deben tener un buen grosor para que no se cocinen demasiado.
Añadir los calabacines a la sartén y dejar que se doren ligeramente.
Añade el agua…
La pastilla de caldo, la sal y la pimienta.
Cerrar la tapa, llevar a ebullición y cocinar durante 10-12 minutos.
Mezclar todo con una batidora de mano.
Añadir los 100 g de queso boursin. Yo puse una entera (150g) pero creo que eso puede desagradar a algunas personas. Debes saber que el boursin olerá en la sopa caliente. Pero una vez enfriado, no llegará ningún olor a nuestras fosas nasales(!) pero el sabor estará presente y será delicioso!
Mezclar de nuevo con el boursin.
Añade el tabasco. Unas pocas gotas son suficientes.
A continuación, deje que la sopa se enfríe a temperatura ambiente y refrigere durante al menos 2 horas.
Justo antes de servir, tuesta los piñones en una sartén caliente, con cuidado de no quemarlos.
Lavar las hojas de cilantro y cortarlas en tiras.
Servir la sopa fría con un chorrito de aceite de oliva, unos piñones tostados y tiras de hojas de cilantro. Sírvelo inmediatamente.
