Uma sopa realmente saborosa e fresca para os dias quentes de Verão! Uma verdadeira alquimia tem lugar com todos os ingredientes juntos. O pinhão crocante, a frescura das folhas de coentros e a cremosidade da sopa. Um ingrediente bastante invulgar faz a sua aparência…
Portanto, há um ingrediente invulgar nesta sopa deliciosa! Chama-se boursin. Foi ideia da minha mãe adicionar este alho e este queijo de ervas em vez de creme! Não o sente imediatamente e substitui realmente o creme… Pode experimentá-lo de olhos fechados!
Receita para “sopa fria de abobrinha”:
-3 abobrinhas de tamanho médio -3 cebolas brancas -3 colheres de sopa de azeite de oliva -500g de água (mais se as aboborinhas forem enormes!) -1 cubo de caldo -100g de “boursin ail et fine herbes -sal, pimenta, tabasco -fresh coentros -pinhos secos
Para as receitas não publicadas contidas no meu primeiro livro, está aqui:
Comece por lavar e limpar três cebolas brancas.
Cortar o caule a cerca de 5 a 6 cm do bulbo. Cortá-los em pequenos pedaços.
Aquecer o azeite numa frigideira e fritar as cebolas.
Lavar e cortar as extremidades das aboborinhas. Corte-os em fatias de 1,5cm. Devem ser mantidos a uma boa espessura para não os cozer em demasia.
Acrescentar as abobrinhas à panela e deixar dourar ligeiramente.
Acrescentar a água…
O cubo de caldo, sal e pimenta.
Fechar a tampa, deixar ferver e cozinhar durante 10-12 minutos.
Misturar tudo com uma varinha mágica.
Acrescentar os 100g de queijo boursin. Introduzi um inteiro (150g) mas penso que isso pode desagradar a algumas pessoas. Deve saber que o boursin vai cheirar na sopa quente. Mas uma vez arrefecido, nenhum cheiro chegará às nossas narinas(!) mas o sabor estará presente e delicioso!
Misturar novamente com o boursin.
Acrescentar o tabasco. Algumas gotas são suficientes!
Depois deixar a sopa arrefecer até à temperatura ambiente e refrigerar durante pelo menos 2 horas.
Pouco antes de servir, torrar os pinhões numa panela quente, tendo o cuidado de não os queimar!
Lavar as folhas de coentros e cortá-las em tiras.
Servir a sopa fria com um fio de azeite, alguns pinhões torrados e tiras de folhas de coentros. Servir imediatamente!
