Esses biscoitos têm um sabor e uma textura inesperados! Coloquei uma manteiga que faço de avelã, ou seja, bem colorida, com sabores altamente desenvolvidos.
Mas também avelã em pó e avelãs torradas e trituradas. A princípio, eles se parecem com os clássicos biscoitos de chocolate branco, mas, assim que você os morde, tem uma experiência de sabor totalmente nova!
Les ingrédients pour 14 cookies :
125 g de manteiga semissalgada
150 g de açúcar mascavo
100 g de avelã em pó
60g de ovo
35 g de leite semidesnatado
1 colher de chá de extracto líquido de baunilha
180 g de farinha
100 g de avelãs torradas picadas
La préparation :
Para as avelãs inteiras, usei aqui avelãs sem pele. Eu as asso no forno a 170°C por 16 a 18 minutos.
Para quebrá-las, eu as esmago delicadamente com um rolo de massa. Eu grelhei muito mais do que 100 g, pois costumo usá-los em saladas!
Para fazer os biscoitos, coloque a manteiga semissalgada em uma panela.
Cozinhe em fogo brando até que adquira uma bela cor de nozes, sem queimar o fundo da panela.
Deixe esfriar. Coloque o açúcar mascavo, a baunilha, o leite semidesnatado e 60 g de ovo em uma tigela.
Misture bem e adicione o pó de avelã.
Quando a manteiga não estiver mais muito quente, coloque 90 g, que deve ser o peso nesse ponto. Você começou com 125 g, mas parte dela cozinhou e evaporou.
Misture e acrescente a farinha.
Misture bem e, em seguida, adicione 100 g de avelãs torradas e trituradas.
Se a massa estiver muito mole nesse estágio, leve-a à geladeira por um quarto de hora. Em seguida, faça bolinhas com a mistura, aqui usando uma colher de sorvete, e coloque-as em uma assadeira forrada com papel vegetal.
Achate-os levemente com a mão.
Em seguida, asse por 10 a 12 minutos a 170°C em fogo assistido por ventilador.
O centro deve parecer ligeiramente mal cozido. Para deixá-los mais redondos, eu torço um pequeno círculo (ou copo de cabeça para baixo) ao redor de cada biscoito.
Eles se conservarão perfeitamente bem em temperatura ambiente em uma caixa hermética por 5 dias.
