Los blinis son tortitas rusas gruesas. ¡En el singular es en realidad un blin (¡se pronuncia bline!) y en el plural blini porque la «i» indica el plural! La «s» sólo se añadió para entrar en la lengua francesa, ¡pero no se pronuncia normalmente! Hasta aquí su fonética. Para la receta os dejo que la descubráis.
Receta de «blinis» para 9 blinis grandes:
-2 huevos -250g de harina -una buena pizca de azúcar -un paquete de levadura de panadería (o 10g de levadura fresca) -330ml de leche semidesnatada -20g de mantequilla derretida (blanda o semi-salada)
Poner la harina, la levadura y el azúcar en un bol.
Verter la leche caliente poco a poco para incorporar todo.
Mezclar con un batidor para que la masa quede lo más suave posible. Cubrir la masa con un paño y dejarla subir durante una hora en un lugar cálido (25°C).
Separar las yemas de las claras de los huevos. Una vez que la masa haya subido, añadir las yemas de huevo y la mantequilla derretida y una buena pizca de sal.
Volver a alisar la masa con un batidor.
A continuación, deje que la masa vuelva a subir entre 40 minutos y una hora como máximo.
Batir las claras de huevo a punto de nieve.
Añadirlas suavemente a la masa, levantándola para que las claras no se bajen.
Calentar una sartén para blinis a fuego moderado y engrasarla un poco con papel de cocina. Vierta dos cucharadas de masa en el centro y extienda con el dorso de la cuchara si es necesario. La masa es muy gruesa y también se hinchará al cocinarse.
Una vez que la masa esté burbujeante, dar la vuelta al blin(i) y dejar que se cocine un poco el otro lado.
Servir inmediatamente o reservar en una rejilla y envolver en film transparente cuando se enfríe. Caliéntelos en una tostadora.
