Os Blinis são panquecas russas espessas. No singular é de facto um blin (pronuncia-se bline!) e no plural blini porque o “i” indica o plural! O “s” foi apenas adicionado para entrar na língua francesa, mas normalmente não é pronunciado! Lá se vai a sua fonética. Para a receita deixei-o descobrir.
Receita para “blinis” para 9 blinis grandes:
-2 ovos -250g de farinha -uma boa pitada de açúcar -uma embalagem de levedura de padeiro (ou 10g de levedura fresca) -330ml de leite semi-desnatado -20g de manteiga derretida (mole ou semi-salgada)
Colocar a farinha, levedura e açúcar numa tigela.
Verter o leite aquecido um pouco de cada vez para incorporar tudo.
Misturar com um batedor para tornar a massa tão suave quanto possível. Cobrir a massa com um pano e deixá-la subir durante uma hora num local quente (25°C).
Separar as gemas das claras de ovos. Assim que a massa tiver subido, adicionar as gemas e a manteiga derretida e uma boa pitada de sal.
Alisar a massa de novo com um batedor.
Depois deixar a massa subir novamente durante 40 minutos até um máximo de uma hora.
Bater as claras de ovo até ficarem firmes.
Acrescentá-los suavemente à massa, levantando-a para que os brancos não caiam para fora.
Aquecer uma frigideira blini com calor moderado e untá-la um pouco com toalhas de papel. Deitar duas colheres de sopa de massa no centro e espalhar com a parte de trás da colher, se necessário. A massa é muito espessa e também vai inchar à medida que coze!
Assim que a massa estiver a borbulhar, virar a(i) cegueira(s) e deixar o outro lado cozinhar um pouco.
Servir imediatamente ou colocado de lado numa grade de arame e embrulhar em película aderente quando estiver frio. Aqueça-as numa torradeira.
