Blinis عبارة عن فطائر روسية سميكة. في صيغة المفرد هو في الواقع blin (وضوحا bline!) وفي صيغة الجمع blini لأن الحرف “i” يشير إلى الجمع! تمت إضافة “s” فقط لإدخال اللغة الفرنسية ولكن لا يتم نطقها عادةً! جزيلاً على صوتياته. بالنسبة للوصفة ، دعك تكتشفها.
وصفة “بلينيز” لـ 9 فطيرة بليني كبيرة:
-2 بيض -250 جرام دقيق – قليل من السكر – عبوة من خميرة الخباز (أو 10 جرام من الخميرة الطازجة) -330 مل حليب شبه منزوع الدسم – 20 جرام زبدة مذابة (غير مملحة أو نصف مملحة)
ضعي الدقيق والبيكنج بودر والسكر في وعاء.
أضف الحليب الدافئ ببطء لدمج كل شيء جيدًا.
تخلط بالمضرب لتنعيم الخليط قدر الإمكان. تترك هذه العجينة لتنتفخ لمدة ساعة ، وتغطى بقطعة قماش في مكان دافئ (25 درجة مئوية).
افصل الصفار عن بياض البيض. بمجرد أن تنضج العجينة ، أضيفي صفار البيض والزبدة المذابة بالإضافة إلى رشة جيدة من الملح.
افردي الخليط مرة أخرى بمضرب بيض.
ثم دع العجينة ترتفع مرة أخرى ما بين 40 دقيقة وساعة كحد أقصى.
يخفق بياض البيض قاسيًا جدًا.
نضيفها إلى العجينة برفق مع رفعها حتى لا يسقط البياض.
سخني مقلاة بليني على نار متوسطة ودهنها برفق بمنشفة ورقية. ضعي ملعقتين كبيرتين من الخليط في المنتصف ووزعيه حسب الحاجة بظهر الملعقة. العجينة سميكة جدًا وستنتفخ أكثر أثناء الطهي!
بمجرد أن يصبح الخليط فقاعات ، اقلب blin (i) واترك الجانب الآخر يطهى قليلاً.
قدميها على الفور أو ضعيها جانبًا على رف سلكي ولفيها بمجرد تبريدها في غلاف بلاستيكي. أعد تسخينها في المحمصة.
