¡Me encanta hacer galettes des rois! Y cada año, desde hace algún tiempo, me divierto ideando una nueva receta. Obviamente para los puristas, la versión clásica también está en mi blog de cocina. Esta vez os doy la versión con crema de castañas y chips de castañas. ¡Es una pequeña bomba, sobre todo con un hojaldre invertido casero que realmente no es complicado de hacer a pesar de su terrorífico nombre!
Después de las vacaciones, me sobró un tarro de salsa tartufata, básicamente champiñones con aceite de trufa. Es súper rico en sabor y es una delicia con muchas cosas. Sugiero esta asociación, más que una receta real, con Brillat-Savarin, este queso y jamón muy cremoso. Esto da un resultado perfecto: un croque-monsieur crujiente por fuera y suave y fundente por dentro, ¡ideal para una comida rápida con una buena ensalada!
Hace poco fui a Bolonia y allí probé un budín de amaretti que disfruté mucho. Es un poco como un flan de huevo, pero con más amaretti en polvo, licor de amaretto y aquí unas chispas de chocolate amargo. Una verdadera delicia densa y fundente al mismo tiempo, especialmente cuando se degusta frío. ¡Una receta muy original que os propongo hoy!
Hace poco fui a Bolonia, una ciudad italiana que me encanta. Además del famoso cocido, hay otras especialidades culinarias de la región, como este pastel de arroz. Es obviamente dulce y consiste en arroz con leche, al que se añaden huevos, canela, vainilla, limón y piel de naranja confitada, almendras y amaretto. Una delicia para las fiestas.
Un plato sencillo y contundente, ¡que es lo que me gusta de esta época! Os ofrezco este plato de pasta, aquí mafaldines, con una preparación a base de kale y champiñones. Con vino blanco, nata, ajo y parmesano, es una auténtica delicia.
Una amiga brasileña acaba de pasar unas vacaciones con su novio en mi casa y ha hecho esta receta, que es a su vez una variación de una de mis recetas. Marianna hizo una buena adaptación donde la harina es reemplazada por maní tostado en polvo y donde el azúcar es muy reducido. El resultado son unos pasteles absolutamente deliciosos, ¡perfectos para un pequeño tentempié que te haga avanzar!
