Aquí tienes una receta de «Chili con carne». Digo «uno» porque, efectivamente, hay un número increíble de ellos. Además, rompo mi norma de ceñirme siempre a la tradición, porque el «chili» original no lleva alubias rojas. ¡Pero es tan bueno con él! Cabe destacar que este plato es… ¡americano y no mexicano! Se creó en Texas, pero se notan las influencias. Pero no le pidas a un mexicano la receta de este plato. Cuanto más tiempo se cocine a fuego lento este plato, mejor estará. Yo cocino los míos durante unas cinco horas…
Receta de «chili con carne» para 6 personas:
-700g de carne picada con un mínimo de 15% de grasa -2 cucharadas de aceite -2 cebollas -7 dientes de ajo -1 pimiento rojo -1 pimiento verde -2 tomates frescos, pelados y sin semillas -700g de tomates pelados en lata -750 g de alubias rojas (ya cocidas) -2 cucharadas de comino en polvo -2 cucharaditas de canela en polvo -1 cucharadita de mezcla de «4 especias» -2 cucharaditas de orégano -1/2 cucharadita de chile en polvo -1 cucharadita de sal -pimienta
Comience por picar los dientes de ajo.
Fríelos en aceite a fuego moderado.
Preparar la carne picada y los demás ingredientes.
Añadir la carne al ajo, que está empezando a tomar color.
Picar finamente la cebolla.
Picar finamente los pimientos (¡sin semillas!).
Añadir las cebollas y los pimientos a la carne cuando esté cocida. Remover regularmente.
Pelar los tomates sumergiéndolos en agua hirviendo durante unos segundos.
Córtalos en trozos y añádelos a la fuente de horno.
Se añade la lata de tomates pelados y se llena el equivalente a la mitad de la lata con agua que se vierte en la fuente.
Añade todas las especias.
Orégano seco.
Dejar reducir durante una hora, siempre a fuego moderado, , removiendo regularmente .
A continuación, añada las judías escurridas.
Pongo frijoles en latas. Son muy prácticos y son perfectos para este plato. Utilicé tres latas de 450g (peso neto escurrido 250g).
El consejo de Bernard: Escurrí dos latas y puse el jugo en una. Este zumo da un color y una consistencia muy agradables.
Mezclar bien y cocinar el mayor tiempo posible a fuego lento. Cuanto más tiempo se cocine este plato a fuego lento, mejor estará.
Aquí está el resultado después de 4h30 de cocción. Si el chile se vuelve demasiado «blando», se puede añadir agua.
Esto es lo que hago para calentarlo al día siguiente.
