Aqui está uma receita de “Chili con carne”. Digo “um” porque há de facto um número incrível deles. Além disso, estou a quebrar a minha regra de me manter sempre o mais próximo possível da tradição, porque o “chili” original não contém feijão vermelho. Mas é tão bom com ele! De notar que este prato é … Americano e não Mexicano! Foi criado no Texas, mas é possível sentir as influências. Mas não peça a um mexicano uma receita para este prato! Quanto mais tempo se fervilhar este prato, melhor será. Cozinho o meu durante cerca de cinco horas…
Receita de “chili con carne” para 6 pessoas:
-700g de carne picada com um mínimo de 15% de gordura -2 colheres de sopa de óleo -2 cebolas -7 dentes de alho -1 pimento vermelho -1 pimenta verde -2 tomates frescos, descascados e sem sementes -700g de tomate pelado em lata -750g de feijão vermelho (já cozinhado) -2 colheres de sopa de cominho em pó -2 colheres de chá de canela em pó -1 colher de chá de mistura de “4 especiarias -2 colheres de chá de orégãos -1/2 colher de chá de chilli em pó -1 colher de chá de sal -pepper
Comece por moer os dentes de alho.
Fritá-los em óleo com calor moderado.
Preparar a carne picada e outros ingredientes.
Acrescentar a carne ao alho, que está apenas a começar a colorir.
Cortar finamente a cebola.
Cortar finamente os pimentos (sem sementes!).
Adicionar as cebolas e pimentos à carne quando esta estiver cozinhada. Mexer regularmente.
Descascar os tomates mergulhando-os em água a ferver durante alguns segundos.
Corte-os em pedaços e junte-os ao prato de cozedura.
Adicionar a lata de tomate pelado e encher o equivalente a metade da lata com água, que é depois despejada no prato.
Acrescentar todas as especiarias.
Orégãos secos.
Deixar reduzir durante uma hora, ainda com um calor moderado, , agitando regularmente .
Em seguida, adicionar os feijões drenados.
Coloco feijões numa lata. São muito práticos e são perfeitos para este prato. Utilizei três latas de 450g (peso líquido drenado 250g).
O conselho de Bernard: Esvaziei duas latas e coloquei o sumo numa só. Este sumo dá uma cor e consistência muito agradável.
Misturar bem e cozinhar o máximo de tempo possível em lume brando. Quanto mais tempo este prato fervilhar, melhor será.
Aqui está o resultado após 4h30 de cozedura. Se a pimenta se tornar demasiado “pastosa”, pode adicionar água.
