Começo com o yudane, para aqueles pãezinhos de cachorro-quente. Também se poderia fazer hambúrgueres redondos. A textura resultante é fantástica e uma mudança radical de uma massa feita sem o yudano. Então o que é yudane? Esta é uma parte da farinha que é misturada com água a ferver. Esta massa macia e plástica é então adicionada à massa, o que se torna então incrível. Porquê? Isto porque o yudan reteve a água e fez com que o amido da farinha gelatinizasse. Tem de tentar acreditar nisso!

Apesar da aparente complexidade dos desenhos, a receita é de facto muito simples e rápida de fazer. Só é preciso preparar a massa suficientemente cedo para a deixar descansar. O pequeno truque para fazer as voltas não é complicado e o resultado é espantoso: os kanelsnurrer são suaves e perfumados!
