Se seguiu a “Viagem Culinária: São Paulo”, descobriu as pequenas “coxinhas”, traduzidas literalmente como “coxinhas”. Pronuncia-se “cochiniasse” e é facilmente encontrado para venda em restaurantes ou para levar para a rua no Brasil. Estão a encher deliciosamente, mas cada vez que lá vou peço as minhas coxinhas de frango!
Receita para 24 pequenas coxinhas de frango:
Brincadeira:
-3 grandes peitos de frango
-1 litro de água
-1 cebola
-1 pequeno ramo de salsa
-1 traço de ketchup (principalmente para cor)
-sal, pimenta
Colar:
-460g de farinha
-50g de manteiga
-4 pequenos cubos de caldo de galinha (knorr)
-750ml de água de cozedura de frango
Comece por cortar os peitos de frango em pedaços.
Levar 1 litro de água a ferver. Colocar os pedaços de frango e cozinhar durante 15 minutos.
Drenar mas, acima de tudo, manter os sumos de cozinha!!!!
Quando a galinha tiver arrefecido, desfiá-la. Esta é a operação mais demorada, mas não difícil!
Numa frigideira, colocar um pouco de óleo e fritar 1 cebola cortada em pequenos pedaços em lume brando.
Quando a cebola estiver translúcida, adicionar toda a galinha.
Misturar bem e cozinhar durante 5 minutos. Acrescentar a salsa picada.
Adicione um pouco de molho de ketchup (isto é principalmente para colorir e no Brasil usam frequentemente tinta vermelha mas também ketchup!)
Misture bem e desligue o calor, está pronto!
Adicione 750ml de água de cozedura de frango, a manteiga e 2 lingotes de caldo de galinha (knorr na minha caixa que contém 2 cubos pequenos, portanto 4 no total na foto!)
Quando a água ferver, adicionar a farinha de uma só vez.
Misturar bem com uma colher de madeira. Torna-se rapidamente difícil misturar, é preciso muita gordura de cotovelo!
Mexer bem em lume brando até a massa sair do fundo da panela, como a massa de choux! Deixar cozinhar por mais 1 ou 2 minutos.
Verter a bola de massa para uma tigela e cobrir imediatamente com película aderente para evitar que a mesma seque.
Cuidado, está calor! Portanto, espere um pouco para tratar da massa! Mas não espere que arrefeça completamente…
Pegue numa bola de massa e enrole-a entre as suas mãos, do tamanho de uma bola de pingue-pongue.
Pressionar o polegar para o meio da massa.
Comece a beliscar a borda da massa, virando-a uma e outra vez, como se estivesse a fazer cerâmica. Encher a cavidade com uma ou duas colheres de recheio de frango.
Ainda virando a coxinha sobre si mesma, feche-a puxando a massa para cima.
Ao dar-lhe uma forma de pêra.
Fechar a parte de cima e refazer a silhueta para nivelar a silhueta. Fazer o mesmo com a restante massa e recheio.
Preparar uma tigela de leite e uma tigela de pão ralado. Mergulhar as coxinhas no leite…
Depois enrolá-los em migalhas de pão.
Está quase a acabar!
Preparar uma panela de óleo, colocar em lume quente, quando o óleo estiver pronto, fritar as coxinhas.
Cozi-os durante cerca de 5 minutos, mas precisam de ser castanhos dourados.
O tamanho da minha frigideira permitiu-me fritá-las em cinco.
Para ser apreciado quente. Também podem ser congelados antes de serem fritados. Para os reaquecer: no forno ou melhor ainda numa frigideira!
