Si ha seguido el «viaje culinario: São Paulo» , entonces ha descubierto las pequeñas «coxinhas», traducción literal de «pequeños muslos». Esto se pronuncia «cochiniasse» y se encuentran fácilmente a la venta en restaurantes o para llevar en las calles de Brasil. Son deliciosamente abundantes, pero cada vez que voy allí, ¡pido mis «coxinhas» de pollo!
Receta para 24 coxinhas pequeñas de pollo:
Llamada de broma:
-3 pechugas de pollo grandes
-1 litro de agua
-1 cebolla
-1 manojo muy pequeño de perejil
-1 pizca de ketchup (principalmente para el color)
-sal pimienta
Masa:
-460g de harina
-50g de mantequilla
-4 cubitos de caldo de pollo (knorr)
-750ml de agua de cocción de pollo
Comience cortando las pechugas de pollo en trozos.
Poner 1 litro de agua a hervir. Agregue las piezas de pollo y cocine por 15 minutos.
Escurrir pero sobre todo conservar los jugos de la cocción!!!!
Cuando el pollo esté frío, desmenúzalo. ¡Esta operación es la más larga, pero sin dificultad!
En una sartén, agregue un poco de aceite y saltee 1 cebolla, cortada en trozos pequeños, a fuego lento.
Cuando la cebolla esté transparente, agregar todo el pollo.
Mezcle bien y cocine por 5 minutos. Añadir perejil picado.
Agregue una pizca de salsa de ketchup (es principalmente para colorear y en Brasil a menudo le ponen un colorante rojo, ¡pero también ketchup!).
Mezcla bien y apaga el fuego, ¡ya está listo!
Añadir 750ml de agua de cocción de pollo, mantequilla y 2 lingotes de caldo de pollo (knorr en mi caso que contiene 2 cubos pequeños, ¡así que 4 en total en la foto!)
Cuando el agua hierva, agregue la harina de una vez.
Mezclar bien con una cuchara de madera. Rápidamente se vuelve difícil de mezclar, ¡se necesita mucha fuerza de codo!
Mezcle bien a fuego lento hasta que la masa se desprenda del fondo de la sartén, ¡como una masa choux! Deja cocinar por 1 o 2 minutos adicionales.
Vierta la bola de masa en un tazón e inmediatamente cubra con una envoltura de plástico para evitar que se seque.
¡Cuidado, hace calor! ¡Así que espera un poco para manejar la masa! Pero no esperes a que se enfríe por completo…
Toma una bola de masa que haces rodar entre tus manos del tamaño de una pelota de ping-pong.
Mete el pulgar en el medio de la masa.
Comience a pellizcar el borde de la masa, girándola constantemente, como si fuera cerámica. Llene la cavidad con una o dos cucharadas de relleno de pollo.
Todavía girando la coxinha sobre sí misma, cerrar tirando de la masa hacia arriba.
Dándole forma de pera.
Cierra la parte superior y vuelve a trabajar todo para estandarizar su silueta. Haz lo mismo con el resto de la masa y el relleno.
Prepara un bol de leche y un bol de pan rallado. Mojar las coxinhas en la leche…
Luego rebózalos en pan rallado.
¡Esta casi terminado!
Prepare una sartén con aceite, ponga a fuego fuerte, cuando el aceite esté listo, fría las coxinhas.
Los cociné durante unos 5 minutos, pero tienen que estar dorados.
El tamaño de mi sartén me permitió freírlos de cinco en cinco.
Para disfrutar caliente. También puedes congelarlos antes de freírlos. Para recalentarlos: ¡al horno o mejor aún fritos!
