J’adore les sablés, mais surtout quand ils sont trop grands pour être mangés seuls. J’avais proposé la recette des broyés du Poitou dans mon premier livre “Mes desserts” édité chez Flammarion. Cette fois je vous donne une adaptation aux noix, bien craquante à souhait. J’ajoute un peu d’huile de noix, qui vient parfumer à merveille ce gros et généreux broyé.
Eu tinha provado estes makis invertidos num restaurante de “fusão” em Santiago, Chile, com dois amigos. Embora não fossem muito tradicionais, eram realmente deliciosos. No blog, propus maki japonês com salmão chilli e gimbaps coreano com frango. Duas técnicas semelhantes, mas com arroz vinagre para a primeira e arroz com óleo de sésamo para a segunda. Como estamos aqui claramente no “alimento de fusão”, quis testar um arroz que era ao mesmo tempo vinagrado (em menores proporções) e com óleo de sésamo. O resultado é perfeito para mim. Aqui, com camarão estaladiço e salmão cozido e fumado, o maki é rico, mas decadente e apetitoso.

Donuts generosos, macios e recheados com mirtilos, e não demasiado doces! Se isto lhe parecer algo que gostaria de fazer, vou contar-lhe todos os meus segredos. Começo com uma pasta de yudane que dará uma textura incrível, depois ofereço um recheio com uma consistência que se mantém perfeitamente unida, sem ser uma compota muito doce. Claro que se pode variar a fruta tanto quanto se queira e até mesmo espalhar um pouco…
Pode parecer uma loucura para alguns, mas eu sou um fã dos rebentos de Bruxelas! Não os traumáticos da nossa cantina de infância, eh! Mas os cozinhados em casa. Adoro-os, independentemente da forma como são cozinhados. Começo com couve cozida, servida com um delicioso molho de tahini. Simples, eficaz e bom!
De drôles de sablés avec une jolie forme en spirale, tout cela sans ustensile particulier. Vous les façonnerez à la main. C’est un peu de travail et vous recommencerez sans doute plusieurs fois pour obtenir un beau dessin. Mais c’est assez amusant à faire, surtout si vous voulez initier vos enfants à la cuisine. Et en plus, ils seront très bons !
