Para este novo ano, proponho-vos uma nova receita de galette! Desta vez, foi o cheiro de limão, laranja e Grand Marnier que invadiu a minha cozinha e posso assegurar-vos que foi um prazer raro! Os sabores são doces e mágicos. Acrescento pequenos cubos de casca de laranja cristalizada, que combinam perfeitamente com a amêndoa em pó. Uma receita que vou definitivamente voltar a fazer!
Estou a experimentar muito neste momento com o thangzhong, depois do yudane. Estes são muito rápidos a fazer usando farinha e um líquido. Isto melhora a consistência dos pãezinhos ou do pão a um grau incrível. Proponho uma receita para um brioche de pequeno-almoço que cheira a manteiga fresca, rum e baunilha, que recuperará a sua incrível suavidade assim que for colocado na torradeira. Uma pequena bomba com uma boa manteiga semi-salgada para barrar, ou uma geleia de amora preta, por exemplo!
O Natal está mesmo ao virar da esquina e eu queria sugerir uma receita de borrego. Vou dar-lhe o do meu navarin com mel, laranja, especiarias de Natal, cenouras e batata doce. É delicioso e quase como uma tagine! Há muitas semelhanças entre um navarin e uma tagine e uso aqui especiarias de Natal, nomeadamente canela, anis estrelado, pimenta e cravo-da-índia. Deixei deliberadamente de fora o gengibre. O resultado é um prato reconfortante, que é perfumado em casa, e obterá uma carne suave e saborosa ao paladar. E, claro, em breve estarei a oferecer um navarin mais clássico!
