Uma receita fácil e deliciosa que lhe pode fazer querer redescobrir os rebentos de Bruxelas. Adoro, mas vejo demasiadas pessoas com um preconceito. Sugiro este prato que pode ser usado como acompanhamento ou comido por conta própria. Uma cama de cogumelos em molho de gorgonzola, coberta com couves-de-bruxelas salteadas em azeite e um parmesão pecan desmoronado. É macio, estaladiço, reconfortante!
Receita para 4 pessoas :
500g de couves-de-bruxelas
500g de cogumelos à sua escolha
3 dentes de alho
20cl full cream
70g de queijo gorgonzola
sal, pimenta, azeite
Para o desmoronamento :
40g de manteiga semi-salgada
40g de migalhas de pão
40g de nozes pecan
40g de queijo parmesão ralado
pimenta moída
Lavar e drenar as couves de Bruxelas.
Cortar a pequena base e remover as folhas danificadas, se necessário. Cortar a couve ao meio.
Aquecer uma panela grande com duas colheres de sopa de azeite de oliva. Colocar as metades do repolho cortadas lateralmente.
Grelhá-los levemente.
Depois colocar uma tampa sobre a panela e cozinhar durante 10 minutos em lume brando, mexendo regularmente. Devem ser tenras.
Preparar os cogumelos. Coloco muito shiitake, shimeji, etc. Mas pode colocar qualquer um deles que quiser!
Corte-os em pedaços e coloque-os na panela com duas colheres de sopa de azeite e os dentes de alho descascados e picados.
Deixar cozinhar até que tenham amolecido e se sintam bem.
Verter o creme e adicionar o queijo gorgonzola, que se derreterá muito rapidamente. Acrescentar pimenta a gosto.
Ponha de lado ou faça o desmoronar enquanto as couves ou os cogumelos cozinham. Cortar os pecans com uma faca.
Verter para um recipiente com os outros ingredientes (manteiga, parmesão ralado, migalhas de pão).
Misturar à mão até ter uma bola de massa.
Fazer pequenos pedaços e colocá-los num tabuleiro à prova de forno.
Cozer durante 15-20 minutos a 170°C num forno ventilador. Adapte a cozedura ao seu forno. A coisa toda deve ser bem dourada.
Quando o desmoronamento tiver arrefecido, parti-lo em pedaços estaladiços.
Sirvo todos os elementos quentes juntos: faço uma cama de cogumelos, junto os rebentos de Bruxelas, depois polvilho com os frutos secos desfeitos e picados.
Choux de Bruxelles, champignons sauce gorgonzola et crumble parmesan noix de pécan
Coupez la petite base et enlevez au besoin les feuilles abimées. Coupez en deux les choux.
Faites chauffer une grande poêle avec deux cuillerées à soupe d’huile d’olive. Posez les demi-choux, face coupée vers le bas.
Faites-les griller légèrement.
Placez ensuite un couvercle puis laissez cuire 10 minutes sur feu plus modéré, tout en remuant régulièrement. Ils doivent être tendres.
Préparez les champignons. J’ai mis pas mal de shiitakés, des shimejis etc. Mais vous pouvez mettre ceux de votre choix !
Coupez-les en morceaux puis placez-les dans la poêle avec deux cuillerées à soupLaissez cuire jusqu’à ce qu’ils aient bien ramolli et que cela vous semble bien.e d’huile d’olive et les gousses d’ail épluchées et hachées.
Versez la crème et ajoutez le gorgonzola qui va fondre très vite. Poivrez à votre goût.
Mettez de côté ou alors préparez le crumble pendant la cuisson des choux ou des champignons. Hachez les noix de pécan au couteau. Versez dans un récipients avec les autres ingrédients (beurre, parmesan râpé, chapelure).
Mélangez à la main jusqu’à avoir une boule de pâte.
Faites des petits morceaux que vous placerez dans une plaque allant au four.
Faites cuire 15-20 minutes sur chaleur tournante à 170°C. Adaptez la cuisson à votre four. Le tout doit être joliment doré.
Quand le crumble refroidit, séparez-le en morceaux bien croustillants.
Servez l’ensemble des éléments bien chaud ensemble : je fais un lit de champignons, j’ajoute les choux de Bruxelles, puis je parsème de crumble et de noix hachées.
