Una receta fácil y deliciosa que puede hacer que quieras redescubrir las coles de Bruselas. Me encanta, pero veo a demasiada gente con una idea preconcebida. Sugiero este plato que puede utilizarse como guarnición o comerse solo. Un lecho de setas con salsa de gorgonzola, cubierto con coles de Bruselas salteadas en aceite de oliva y un crumble de parmesano y nueces. Es suave, crujiente y reconfortante.
Durante un viaje reciente al Quai Branly para ver una exposición, fui a probar una galleta en el café del museo.
