Continúo con mis propuestas de calabaza para el otoño, ya que es muy fácil de utilizar tanto en recetas dulces como saladas. Aquí tienes unos ñoquis muy sencillos de hacer. Puede que sólo se tarde un rato en hacerlos bonitos, pero quizá sea el momento de pasar un rato en la cocina juntos charlando sobre una buena comida. ¡De momento sólo os doy la receta básica, luego publicaré un plato en el que he puesto estos bonitos ñoquis de colores!
Este hermoso brioche nos llega desde Brasil, donde Doña Arlene ha accedido amablemente a compartir su receta conmigo. Lo hicimos juntos en el estado de São Paulo el verano pasado y estaba esperando el momento adecuado para publicarlo. Ahora que ha llegado el otoño, ¡ya es hora de que lo ponga en mi blog de cocina! El pão de abóbora es un bollo muy suave hecho con carne de calabaza, en este caso de calabaza. La consistencia es una maravilla y el conjunto es delicioso con una simple mantequilla semi-salada untada por encima. Soy un fan, ¡gracias de nuevo a Doña Arlene!
Ahora que el otoño empieza a hacerse notar, te propongo una receta que incorpora muchos ingredientes deliciosos que evocan esta hermosa estación. Manzanas, peras, chocolate con leche, praliné y avellanas, todo ello en un crujiente pastel de avellanas. ¡Estoy segura de que este crumble te hará sentir mejor! ¡Me encanta llegar a casa cuando hace frío y calentarme con un buen trozo de postre del horno!
Te propongo una receta de tarta, esta vez no muy dulce, con sabor a café, cacao y frutos secos. Es rico en chocolate y cacao, y si se utiliza un chocolate negro muy fuerte, el pastel será aún menos dulce. Como suele ocurrir con mis recetas de pasteles, ¡sabrá mejor al día siguiente después de una noche en la nevera!
Durante mis talleres de «hojaldre invertido», a menudo me preguntan qué se puede hacer con los restos de masa. Porque, a diferencia de la masa quebrada o la masa dulce, no se puede hacer una bola y reutilizarla de la misma manera. Se pierde parte del bonito hojaldre, pero se pueden hacer deliciosos hojaldres para el aperitivo. ¡Así que aquí tienes una forma estupenda de reciclarlo de la manera más deliciosa!

Me inspiré mucho en las galletas que se pueden encontrar en Nueva York, en una pastelería muy famosa. Ya había descifrado la receta «sencilla» en mi blog, pero esta vez os ofrezco la versión 100% chocolate. Con un toque de sal y vainilla, estas galletas son completamente adictivas y si empiezas a hacerlas, ¡ten cuidado, porque te pedirán que las hagas siempre! Los hago igual que allí, en versión XXL.
