Recentemente foi-me oferecida uma colaboração com comme-a-la-boucherie.com, um talho online gerido pela família (a família Dubois) sediado em Rungis. O princípio é simples: encomenda-se e recebe-se a encomenda em qualquer lugar em França em caixas isotérmicas para segurança absoluta da cadeia de frio. Todos os tipos de carne são oferecidos, assim como carnes e charcutaria excepcionais. Ao aproximarmo-nos do Pentecostes, proponho uma receita italiana de vitela, a famosa saltimbocca! Literalmente “salta para a boca”, este prato aparentemente muito simples (quase demasiado simples?) é de facto uma delícia absoluta. Presunto curado, salva e vinho branco combinam-se perfeitamente para criar um prato com sabores explosivos.
Fiz recentemente scones para o pequeno-almoço, desta vez com laranja e arandos. São amanteigados, pobres em açúcar e estaladiços no exterior, ricos e arejados no interior. Os sabores da casca da laranja e da manteiga combinam maravilhosamente com a suavidade dos arandos. Lembre-se apenas de colocar a manteiga no congelador um pouco mais cedo para que os scones sejam tão bons quanto possível!
Como se pode resistir a estes belos vegetais verdes, grelhados no forno com azeite e servidos com um cremoso e saboroso molho de pimenta Espelette? Esta não é a minha intenção e, pelo contrário, gostaria de vos apresentar os brócolos, um primo dos brócolos, para aqueles que ainda não os conhecem! Um deleite absoluto!
Aqui está uma receita de pães curtos que desenvolvi depois de comer similares em Londres. São absolutamente deliciosos e especialmente muito estaladiços! Pode guardá-los durante mais de uma semana numa caixa perfeitamente selada. Eles serão irresistíveis para um aperitivo!
Descobri estes amaretti numa loja em Londres, onde vou de vez em quando. Eu não tinha a receita mas apenas a lista de ingredientes. Fiz alguns testes e mais nada! Funcionou muito bem. Tem pistachio, cardamomo e um pouco de casca de laranja e extracto de amêndoa amarga. São tão macios quanto poderiam ser e manter-se-ão bem durante vários dias (semanas?) numa caixa hermética.
