Llevaba años queriendo poner esta receta en mi página web, ¡y por fin está aquí! Este brioche también se conoce como «gâteau des Rois», «couronne des Rois», «galette provençale», «gâteau de Limoux», etc. Por supuesto, habrá variaciones regionales e incluso nacionales, ya que también se encuentra en España y Portugal. Pero la idea general es la misma. Un buen brioche aromatizado con azahar (y a veces un poco de ron) y enriquecido con fruta confitada. ¡Ideal para quien quiera cambiar la galette des Rois de hojaldre!
Desde que doy clases de cocina japonesa, donde se aprende a hacer mochi, se ha convertido en algo que hago muy a menudo en casa. Y como me gusta variar los placeres, me regalé una pequeña creación. En lugar de añadir agua a la masa de mochi, resté azúcar y añadí zumo de manzana. Para el relleno, hice un shiroan, la misma pasta de judías blancas, pero añadiendo pulpa de pera cocida. Con unos trocitos de nuez, obtienes un mochi en el que los sabores son delicados pero muy presentes. Es como comer una nube que se deshace en la boca, con sabores afrutados increíbles.
Un shortbread de cacahuete grande y maravillosamente crujiente con un rico relleno de mantequilla de cacahuete. No son galletas, porque no contienen chocolate ni huevos, y la textura es muy diferente. Aquí, ¡es crujiente y crujiente! Aunque lo más probable es que compartáis un pastelito. Pero no creo que pueda soportar más el intenso sabor a cacahuete, ¡así que ésta es una receta para fans incondicionales de este fruto seco!

No voy a hacerlo siempre, porque es decadente pero totalmente delicioso. La hamburguesa es suficiente en sí misma, sin patatas fritas de acompañamiento, una buena ensalada si es necesario, pero sobre todo una buena copa de vino tinto. La combinación de cebollas caramelizadas, crema de porcini, foie gras a la sartén y filete cocinado como a mí me gusta es totalmente irresistible.
Para las fiestas, los caracoles son una tradición consagrada. Pero por mucho que me encantara cuando era más joven, hoy en día me resulta mucho más difícil, ¡extrañamente! Tengo que admitir que obviamente es la mantequilla lo que hace que te encante, pero no soy muy fan del caracol en sí. Estos gofres llevan ya algún tiempo en el mercado, por lo que son comestibles y deliciosamente crujientes. Añade unas setas y una buena mantequilla de caracol casera, ¡y tendrás un plato rico, pero también sabroso! ¡Una maravilla que hay que saborear!
Rara vez cocino pescado en mi sitio, aunque me encanta. Para las fiestas, aquí tienes una receta rápida y fácil. Filetes de lubina fritos en mantequilla servidos con una polenta cremosa, listos en menos de 15 minutos. Si vas a servirlo con calabaza asada al horno, tendrás que cocinarla una hora y 15 minutos antes. Y si le añades unas láminas de trufa fresca, ¡es aún más lujoso y festivo!
