¡Hay escasez de mantequilla y acabo de publicar el vídeo del kouign amann (ver el vídeo AQUÍ)! Esto me hizo reír, porque sólo me enteré de esta escasez después de anunciar el vídeo. Pero sigo queriendo hacer pasteles, incluso sin mantequilla, y acabo de recibir un nuevo utensilio de KitchenAid. Estos dos elementos me dieron la idea de hacer este pastel, naturalmente sin gluten, con harina de trigo sarraceno y avellanas. Con un toque de miel y canela, huele a otoño. No te preocupes, incluso sin el utensilio, puedes hacer este pastel bajo en azúcar, que está mil veces mejor frío.
Receta para un molde cuadrado de 22 cm:
100 g de avellanas
100g de polvo de almendra
330 g de nata líquida
4 huevos
75 g de aceite de avellana (o de colza)
60 g de azúcar glas
65g de miel
1 cucharadita de vainilla líquida
65g de harina de trigo sarraceno
1/4 de cucharadita de canela en polvo
1/4 de cucharadita de sal
5 manzanas
Triturar las avellanas hasta convertirlas en polvo. También se puede utilizar polvo ya preparado.
Verter en un bol con la almendra en polvo, la nata y los huevos.
Añadir el aceite de avellana (o de colza), el azúcar glas, la miel y la vainilla.
Mezclar con un batidor y añadir la harina de trigo sarraceno, la canela y la sal.
La masa está lista.
Para esta receta, decidí utilizar un nuevo utensilio de KitchenAid que me encanta. Se trata de un cortador de verduras o frutas que hace tiras. Se coloca en los robots de la marca.
La manzana se coloca en la espiga metálica.
En 20 segundos, la manzana se entrega en una banda ancha. ¡Me parece genial!
Por supuesto, se puede hacer el pastel cortando las manzanas en rodajas finas, o incluso con una mandolina. Forrar el molde con papel de hornear. Vierta un buen cucharón de masa.
Con una cuchara, coloque una manzana entera en rodajas finas, tiras o cuñas muy finas. Si la manzana es ecológica, ¡deja la piel!
Vierta otro cucharón de masa para hacer una capa fina. Vuelva a colocar una manzana entera en tiras.
Y así con las 5 manzanas.
Terminar poniendo el hojaldre encima.
Hornear durante 1h15 a 160°C.
Deje que se enfríe completamente a temperatura ambiente y luego enfríe.
Cortarlo en trozos y espolvorear con azúcar glas
Servir el pastel frío. Incluso se puede servir con un flan.
