Há falta de manteiga e acabo de publicar o vídeo do kouign amann (ver o vídeo AQUI)! Isto fez-me rir, porque só ouvi falar desta escassez depois de ter anunciado o vídeo. Mas ainda quero fazer bolos, mesmo sem manteiga, e acabei de receber um novo utensílio da KitchenAid. Estes dois elementos deram-me a ideia de fazer este bolo, naturalmente sem glúten, com farinha de trigo sarraceno e avelãs. Com uma pitada de mel e canela, cheira a Outono. Não se preocupe, mesmo sem o utensílio, pode fazer este bolo de baixo teor de açúcar, que é mil vezes melhor frio.
Receita para um molde quadrado de 22cm:
100g de avelãs
100g de pó de amêndoa
330g de nata gorda completa
4 ovos
75g de óleo de avelã (ou colza)
60g de açúcar de confeiteiro
65g de mel
1 colher de chá de baunilha líquida
65g de farinha de trigo sarraceno
1/4 colher de chá de canela em pó
1/4 colher de chá de sal
5 maçãs
Misturar as avelãs a um pó. Também se pode utilizar pó pré-fabricado.
Verter numa tigela com a amêndoa em pó, natas e ovos.
Adicionar o óleo de avelã (ou de colza), açúcar de confeiteiro, mel e baunilha.
Misturar com um batedor e adicionar a farinha de trigo sarraceno, canela e sal.
A massa está pronta.
Para esta receita, decidi utilizar um novo utensílio da KitchenAid que adoro. Trata-se de um cortador de vegetais ou de fruta que faz tiras. É colocada sobre os robôs da marca.
A maçã é colocada no espigão de metal.
Em 20 segundos, a maçã é entregue numa faixa larga. Acho que é óptimo!
É claro que se pode fazer o bolo cortando as maçãs em fatias finas, ou mesmo com um bandolim. Alinhar a frigideira com papel vegetal. Despeje uma boa concha cheia de massa.
Colher para fora e depois colocar uma maçã inteira em fatias finas, tiras ou cunhas muito finas. Se a maçã for orgânica, deixe a pele ligada!
Verter outra concha cheia de massa para fazer uma camada fina. Voltar a colocar uma maçã inteira em tiras.
E assim por diante com as 5 maçãs.
Terminar colocando a pastelaria por cima.
Cozer durante 1h15 a 160°C.
Deixá-lo arrefecer completamente à temperatura ambiente e depois arrefecer.
Cortar em pedaços e polvilhar com açúcar de confeiteiro
Servir o bolo refrigerado. Pode até servi-lo com um creme de ovos.
