De drôles de sablés avec une jolie forme en spirale, tout cela sans ustensile particulier. Vous les façonnerez à la main. Deliciosos chiles jalapeños rellenos de queso crema, cheddar y pimiento rojo. Los había probado en Seattle hace un tiempo en un estupendo restaurante frente al mar cerca de la universidad en 2019 y anoté lo que me gustaba para poder volver a hacerlos. Lo más difícil es encontrar las guindillas, pero si buscas en internet las encontrarás sin demasiada dificultad. También puedes sustituirlos por mini pimientos. Es crujiente, cremoso y muy picante (pero soportable) en el caso de los jalapeños. Para ser disfrutado con una salsa calmante.
Soy un auténtico fan de esos «perritos calientes» de gambas o langostas que se ven en Estados Unidos y cada vez más en nuestro país. Así que sugiero ambas versiones, ya que la de langosta es bastante cara. Con el bollo muy suave, ¡es una delicia total! Un poco de limón y apio para redondear, ¡y listo!
Le yudane tient du petit miracle. Pour obtenir des brioches, buns et pains au lait magiquement moelleux, le yudane et le tangzhong sont des solution assez hallucinantes ! Je commence par le yudane, pour ces buns à hot dogs. Vous pourriez aussi en faire des buns ronds à hamburgers. La texture obtenue est fantastique et change radicalement d’une pâte faite sans le yudane. Alors qu’est-ce que c’est que le yudane? C’est une partie de la farine qui est mélangée à de l’eau bouillante. On ajoute ensuite cette pâte molle et plastique dans la pâte, qui devient alors incroyable. Pourquoi? Car le yudane a retenu l’eau, et a provoqué la gélatinisation de l’amidon de la farine. Il faut essayer pour le croire !
J’adore ces petits gâteaux feuilletés aux noix de cajou, qui nous viennent du Liban, dont j’adore toute la gastronomie. J’avais fait cette recette dans mon premier livre, Mes desserts, édité chez Flammarion en 2014. J’ai eu très envie de la refaire pour mon blog de cuisine et de la partager avec vous. C’est assez démoniaque, car quand on commence, on a un peu du mal à s’arrêter !! La recette est très facile à faire et je peux vous garantir que ça croustille comme il faut et que les saveurs sont délicieuses. Vous pourrez aussi remplacer les noix de cajou par des pistaches.

Lo rehice todo paso a paso para el blog, y la foto que se ve aquí no es la del libro. Tienes que probar esta receta, sólo por el increíblemente delicioso olor de hornear estos kanelsnurrer, estos «remolinos de canela». Porque además de la canela del relleno, la pasta también contiene cardamomo. Esta es la versión original y escandinava de los bollos de canela. A pesar de la aparente complejidad de los diseños, la receta es en realidad muy sencilla y rápida de hacer. Sólo hay que preparar la masa con suficiente antelación para dejarla reposar. El pequeño truco para hacer los giros no es complicado y el resultado es sorprendente: ¡los kanelsnurrer son suaves y fragantes!
