Hace años que tengo esta receta en mi famosa carpeta azul, en la que ponía las recetas que me gustaban de pequeña. Todavía contiene muchos, principalmente postres. Sinceramente, no sé dónde encontré ésta, probablemente en un libro que tenía en ese momento. Hay que decir que la cocina es una especie de obsesión desde los 7 años. Este pastel es muy rápido de hacer y totalmente adictivo, especialmente para los amantes del chocolate y las frambuesas. ¡Para hacer en este momento, ya que el otoño, obviamente, ya está aquí!
Receta para un molde cuadrado de 20 cm:
Base de cacao :
120 g de mantequilla blanda a temperatura ambiente
1 buena pizca de sal
30g de cacao
60 g de azúcar glas
1 cucharada de agua
150 g de harina
Interior :
125 g de mermelada de frambuesa
125 g de chispas de chocolate negro
Galleta de almendra :
100 g de clara de huevo
1 cucharadita de extracto de almendra amarga
125g de azúcar
135g de polvo de almendra
50g de almendras almendras
En el bol de su robot de cocina o en un bol, mezcle la mantequilla, el cacao, la sal y el azúcar glas.
Yo lo hago con la hoja, ¡pero puedes mezclar con una cuchara!
A continuación, añadir el agua y la harina.
La masa está lista.
Colóquelo en el molde cuadrado forrado con papel de hornear.
Extender con la mano para igualar la superficie.
Hornear a 170°C durante 20 minutos.
Dejar enfriar durante 10 minutos y luego verter la mermelada de frambuesa.
Extiéndalo con una cuchara.
Espolvorear con los trozos de chocolate.
Colocar la clara de huevo (aproximadamente 3 claras), el extracto de almendra amarga, el azúcar y la almendra en polvo en un recipiente pequeño.
Bata a alta velocidad durante 1 minuto.
¡La masa ya está lista!
Viértalo sobre los trozos de chocolate y extiéndalo.
Por último, espolvorear con almendras fileteadas.
Hornear de nuevo, siempre a 170°C, esta vez durante 40-45 minutos.
Dejar enfriar durante una hora antes de cortar en rodajas (se pueden cortar trozos muy pequeños).
Guarde el pastel en una caja hermética en un lugar fresco.
