Tenho esta receita há anos no meu famoso fichário azul, no qual costumava colocar as receitas que adorava quando era criança. Contém ainda muitas delas, principalmente sobremesas. Sinceramente não sei onde encontrei este, provavelmente num livro que eu tinha na altura. É preciso dizer que cozinhar é uma espécie de obsessão desde os 7 anos de idade! Este bolo é muito rápido de fazer e totalmente viciante, especialmente para os amantes de chocolate e framboesa. A fazer neste momento, pois o Outono já está obviamente aqui!
Receita para um molde quadrado de 20cm:
Base de cacau :
120g de manteiga suave à temperatura ambiente
1 boa pitada de sal
30g de cacau
60g de açúcar de confeiteiro
1 colher de sopa de água
150g de farinha
Interior :
125g de compota de framboesa
125g de pedaços de chocolate negro
Bolacha de amêndoa :
100g de clara de ovo
1 colher de chá de extracto de amêndoa amarga
125g de açúcar
135g de pó de amêndoa
50g de amêndoas amêndoas
Na tigela do seu processador de alimentos ou numa tigela, misture a manteiga, o cacau, o sal e o açúcar de confeiteiro.
Faço-o com a folha, mas pode misturar-se com uma colher!
Em seguida, adicionar a água e a farinha.
A massa está pronta.
Colocá-lo no molde quadrado forrado com papel vegetal.
Espalhar à mão para nivelar a superfície.
Cozer a 170°C durante 20 minutos.
Deixar arrefecer durante 10 minutos e depois deitar a compota de framboesa.
Espalhe-a com uma colher.
Polvilhar com as lascas de chocolate.
Colocar a clara de ovo (cerca de 3 claras), extracto de amêndoa amarga, açúcar e amêndoa em pó num pequeno recipiente.
Bater em alta velocidade durante 1 minuto.
A massa já está pronta!
Deite-o sobre as lascas de chocolate e espalhe-o para fora.
Finalmente, polvilhar com amêndoas fendidas.
Cozer novamente, ainda a 170°C, desta vez durante 40-45 minutos.
Deixar arrefecer durante uma hora antes de cortar (pode cortar pedaços muito pequenos).
Armazenar o bolo numa caixa hermética num local fresco.
