A veces sugiero recetas veganas, aunque yo misma no sea vegana, simplemente porque mi cocina me supone un reto y a menudo tengo amigos que lo son. Me encanta elaborar nuevas recetas y siempre es interesante probarlas. Os doy mi nueva receta de pastel vegano de plátano y espéculos. Es rico y muy suave al mismo tiempo. Incluso si no eres vegano, probablemente te encantará. ¡Será perfecto para una merienda!
Receta para un molde de :
390g de harina
6g de levadura
1/2 cucharadita de canela en polvo
50g de polvo de almendra
135g de azúcar moreno
115g de margarina
120g de aceite neutro (tipo colza)
210 g de leche de avena
40g de linaza molida
125g de espéculos
200 g de plátano (peso sin piel)
Instrucciones:
Vierta la harina, la levadura en polvo y la canela en un procesador de alimentos o en un bol.
Derretir la margarina.
Verter en el bol con el aceite, el azúcar moreno y la almendra en polvo.
Añadir la linaza molida y la leche de avena.
Mezclar finamente los espéculos.
Verter en el depósito.
Triturar los plátanos con un tenedor.
Verter y mezclar hasta conseguir una pasta suave.
Verter en el molde forrado con papel de hornear.
Hornee durante 1 hora y 20 minutos a 145°C y luego durante 30 minutos a la misma temperatura con la función de vapor si tiene la posibilidad, de lo contrario con una bandeja de hornear llena de agua hirviendo en el fondo del horno.
Dejar enfriar antes de desmoldar y enfriar toda la noche en film transparente.
Así estará mucho mejor al día siguiente.
