Ingredients: 390 g farine; 6 g de levure; 1/2 c. à café de cannelle en poudre; 50 g de poudre d’amande; 135 g de cassonade; 115 g de margarine; 120 g d’huile neutre ((type colza cuisson)); 210 g de lait d’avoine; 40 g de graines de lin moulues; 125 g de spéculos; 200 g de banane ((poids pesé sans la peau))

Il m’arrive parfois de vous proposer des recettes véganes, alors que je ne le suis pas moi-même, tout simplement par challenge culinaire et que je reçois souvent des amis qui le sont. J’adore mettre au point de nouvelle recettes et c’est toujours intéressant de tester. Je vous donne ma nouvelle recette de cake végan aux bananes et spéculos. Il est riche et très moelleux à la fois. Même sans être végan, vous allez sans doute l’adorer. Il sera parfait pour le goûter !

Ingredients

390 g farine
6 g de levure
1/2 c. à café de cannelle en poudre
50 g de poudre d’amande
135 g de cassonade
115 g de margarine
120 g d’huile neutre (type colza cuisson)
210 g de lait d’avoine
40 g de graines de lin moulues
125 g de spéculos
200 g de banane (poids pesé sans la peau)

Instructions

Versez dans la cuve avec l’huile, la cassonade, la poudre d’amande.
Ajoutez les graines de lin moulues et le lait d’avoine.
Versez dans la cuve.
Écrasez les bananes à la fourchette.
Versez et mélangez le tout pour avoir une pâte homogène.
Versez dans le moule chemisé de papier sulfurisé.
Laissez refroidir avant de démouler puis mettez au frais une nuit dans du film étirable.Mixez finement les spéculos.Faites cuire 1h20 à 145°C puis 30 minutes sur la même température avec la fonction vapeur si vous en avez la possibilité, sinon avec une plaque à gratin que vous remplirez d’eau bouillante dans le fond du four.Il sera de cette façon bien meilleur le lendemain !

I sometimes propose vegan recipes, even though I am not vegan myself, simply because of a culinary challenge and because I often have friends who are. I love to develop new recipes and it’s always interesting to test. I give you my new recipe for vegan banana and specula cake. It is rich and very soft at the same time. Even if you’re not vegan, you’ll probably love it. It will be perfect for a snack!

Recipe for a mold of :

390g of flour
6g of yeast
1/2 teaspoon cinnamon powder
50g of almond powder
135g of brown sugar
115g of margarine
120g of neutral oil (rapeseed type cooking)
210g of oat milk
40g of ground flax seeds
125g of speculos
200g of banana (weight without the skin)

Instructions:

Pour the flour, baking powder and cinnamon into a food processor or bowl.

Melt the margarine.

Pour into the bowl with the oil, brown sugar and almond powder.

Add the ground flaxseed and oat milk.

Finely blend the speculos.

Pour into the tank.

Mash bananas with a fork.

Pour and mix to obtain a homogeneous paste.

Pour into the parchment paper-lined pan.

Bake for 1h20 at 145°C then 30 minutes at the same temperature with the steam function if you have the possibility, otherwise with a baking tray that you will fill with boiling water in the bottom of the oven.

Let cool before unmolding, then chill overnight in cling film.

This way it will be much better the next day!
