Por vezes sugiro receitas veganas, embora eu próprio não seja vegano, simplesmente porque sou desafiado pela minha cozinha e tenho frequentemente amigos que o são. Adoro desenvolver novas receitas e é sempre interessante testar. Apresento-vos a minha nova receita de banana vegan e bolo de especula. É rico e muito macio ao mesmo tempo. Mesmo que não seja vegan, provavelmente vai adorar. Será perfeito para um lanche!
Receita para um molde de :
390g de farinha
6g levedura
1/2 colher de chá de canela em pó
50g de pó de amêndoa
135g de açúcar castanho
115g de margarina
120g de óleo neutro (tipo colza)
210g de leite de aveia
40g de linhaça moída
125g de espéculos
200g de banana (peso sem pele)
Instruções:
Verter a farinha, o fermento em pó e a canela para um processador de alimentos ou para uma tigela.
Derreter a margarina.
Verter na tigela com o óleo, açúcar mascavado e amêndoa em pó.
Adicionar o linhaça moído e o leite de aveia.
Misture finamente os espéculos.
Verter para dentro do tanque.
Amassar as bananas com um garfo.
Verter e misturar para uma pasta macia.
Verter na forma de cozer forrada com papel vegetal.
Cozer durante 1 hora e 20 minutos a 145°C e depois durante 30 minutos à mesma temperatura com a função vapor se tiver a possibilidade, caso contrário com um tabuleiro de cozedura cheio com água a ferver no fundo do forno.
Deixar arrefecer antes de retirar dos moldes, depois arrefecer durante a noite em película aderente.
Desta forma, será muito melhor no dia seguinte!
