Después de la versión de gambas del smørrebrød, he aquí la versión de pollo. ¡Me inspiré claramente en lo que devoré en Copenhague! Y, por supuesto, espero darte muy pronto una receta de pan de centeno. ¡Esta receta de pollo es tan deliciosa y crujiente como puedas desear! Por supuesto, el bacon es opcional, pero te he dado un buen método de cocción para conseguir lonchas perfectamente crujientes.

8 lonchas de beicon
250 g de carne de pollo deshuesada y sin piel
150 g de champiñones blancos
40 g de mayonesa
30 g de nata doble
unas ramitas de cebollino
sal pimienta
aceite neutro y aceite de oliva
5 rebanadas de pan de centeno escandinavo
Coloca las lonchas de beicon en una bandeja de horno forrada con papel de horno. Unta la superficie con aceite.
Cocer en el horno a 200°C con ventilador de 15 a 20 minutos. Tendrás que ajustar el tiempo de cocción a tu horno para que las lonchas de beicon queden bien crujientes.
Deja enfriar en un plato con papel absorbente.
Deshuesa el pollo y quítale la piel y el cartílago.
Corta la carne en trozos.
Corta los champiñones en tiras y fríelos a fuego vivo con un poco de aceite de oliva.
Deja que las setas tomen color.
Reserva 4 tiras y pica el resto con un cuchillo.
Pon las setas picadas en el pollo.
Añade la mayonesa, la nata y el cebollino finamente picado.
Mezcla bien y sazona al gusto con sal y pimienta.
Corta el pan en rebanadas y tuesta 4 de ellas en una tostadora o en el horno durante unos minutos a 170°C.
Corta la quinta rebanada en 8 trozos.
Pon un centímetro de aceite en una sartén pequeña y fríe los trozos de pan.
Deja que se coloree y, a continuación, deja reposar unos instantes sobre papel absorbente.
Sirve el smørrebrød con una buena ración de pollo, bacon crujiente y trocitos de pan frito. ¡Termino con cebollino picado y unos trocitos de cebolla frita!
Placez les tranches de bacon sur une plaque de cuisson garnie de papier sulfurisé. Badigeonnez d’huile la surface au pinceau.
Mettez au four à 200°C sur chaleur tournante pendant 15 à 20 minutes. Il faudra adapter la cuisson à votre four pour avoir de belles tranches de bacon bien croustillantes.
Laissez tiédir sur une assiette avec du papier absorbant.
Désossez le poulet, enlevez la peau et le cartilage. Coupez la chair en morceaux.
Coupez les champignons en lamelles et faites cuire à la poêle sur feu soutenu avec un peu d’huile d’olive. Laissez les champignons se colorer joliment.
Gardez 4 lamelles de côté puis hachez le reste au couteau.
Mettez les champignons hachés dans le poulet. Ajoutez la mayonnaise, la crème et la ciboulette finement ciselée. Mélangez bien puis salez et poivrez à votre goût.
Coupez le pain en tranches et faites griller 4 d’entre elles au grille pain ou au four quelques minutes à 170°C.
Coupez la cinquième tranche en 8 morceaux. Mettez un centimètre d’huile dans une petite casserole puis faites frire les morceaux de pain. Laissez-les se colorer puis laissez reposer quelques instants sur du papier absorbant.
Servez le smørrebrød en mettant une bonne portion de poulet, du bacon croustillant, une lamelle de champignon, des morceaux de pain frit. Je termine avec de la ciboulette ciselée et quelques morceaux d’oignons frits !
