Depois da versão de camarão do smørrebrød, aqui está a versão de frango. Fui claramente inspirado pelo que devorei em Copenhague! E, é claro, espero dar a você uma receita de pão de centeio muito em breve. Esta receita de frango é tão deliciosa e crocante quanto você poderia desejar! É claro que o bacon é opcional, mas eu dei a você um bom método de cozimento para obter fatias perfeitamente crocantes.
Serve 4 pessoas
8 fatias de bacon
250 g de carne de frango sem osso e sem pele
150 g de cogumelos brancos
40 g de maionese
30 g de creme de leite
alguns ramos de cebolinha
sal, pimenta
óleo neutro e azeite de oliva
5 fatias de pão de centeio escandinavo
Coloque as fatias de bacon em uma assadeira forrada com papel manteiga. Pincele a superfície com óleo.
Asse no forno a 200°C em fogo assistido por ventilador por 15 a 20 minutos. Você precisará ajustar o tempo de cozimento de acordo com o seu forno para garantir que as fatias de bacon fiquem bem crocantes.
Deixe esfriar em um prato com papel absorvente.
Desossar o frango e remover a pele e a cartilagem.
Corte a carne em pedaços.
Corte os cogumelos em tiras e frite em fogo alto com um pouco de azeite de oliva.
Deixe os cogumelos colorirem bem.
Reserve 4 tiras e pique o restante com uma faca.
Coloque os cogumelos picados no frango.
Acrescente a maionese, o creme de leite e a cebolinha bem picada.
Misture bem e tempere a gosto com sal e pimenta.
Corte o pão em fatias e toste 4 delas em uma torradeira ou no forno por alguns minutos a 170°C.
Corte a quinta fatia em 8 pedaços.
Coloque um centímetro de óleo em uma panela pequena e frite os pedaços de pão.
Deixe colorir e, em seguida, deixe descansar por alguns instantes em um papel absorvente.
Sirva o smørrebrød com uma boa porção de frango, bacon crocante e pedaços de pão frito. Finalizo com cebolinha picada e alguns pedaços de cebola frita!
Placez les tranches de bacon sur une plaque de cuisson garnie de papier sulfurisé. Badigeonnez d’huile la surface au pinceau.
Mettez au four à 200°C sur chaleur tournante pendant 15 à 20 minutes. Il faudra adapter la cuisson à votre four pour avoir de belles tranches de bacon bien croustillantes.
Laissez tiédir sur une assiette avec du papier absorbant.
Désossez le poulet, enlevez la peau et le cartilage. Coupez la chair en morceaux.
Coupez les champignons en lamelles et faites cuire à la poêle sur feu soutenu avec un peu d’huile d’olive. Laissez les champignons se colorer joliment.
Gardez 4 lamelles de côté puis hachez le reste au couteau.
Mettez les champignons hachés dans le poulet. Ajoutez la mayonnaise, la crème et la ciboulette finement ciselée. Mélangez bien puis salez et poivrez à votre goût.
Coupez le pain en tranches et faites griller 4 d’entre elles au grille pain ou au four quelques minutes à 170°C.
Coupez la cinquième tranche en 8 morceaux. Mettez un centimètre d’huile dans une petite casserole puis faites frire les morceaux de pain. Laissez-les se colorer puis laissez reposer quelques instants sur du papier absorbant.
Servez le smørrebrød en mettant une bonne portion de poulet, du bacon croustillant, une lamelle de champignon, des morceaux de pain frit. Je termine avec de la ciboulette ciselée et quelques morceaux d’oignons frits !
