Un delicioso cerdo estofado que nos llega desde Taiwán. La receta es realmente muy simple de hacer, solo habrá unos pocos ingredientes para obtener en las tiendas de comestibles asiáticas. Para 6 a 8 personas:
1kg de panceta de cerdo con o sin piel (yo estaba sin)
10 dientes de ajo
4 cucharadas de chalotas fritas
4 cucharadas de vergeoise marrón
2 cucharaditas de 5 sabores
4 cucharadas de vino de cocina chino (shaoxing)
1 litro de agua
150 ml de salsa de soja clara
4 huevos duros
Cortar la carne en trozos pequeños.
Viértalo en una cacerola y caliéntelo a fuego alto.
Cuando la carne esté más cocida o ligeramente coloreada, añadir el ajo picado o prensado.
Aquí están las chalotas fritas.
Añádelas al cerdo.
Vierta también los «5 sabores» y la vergeoise marrón.
Vierta el vino de cocina chino.
Agua y salsa de soja.
Es todo ! Llevar a ebullición y luego bajar el fuego con la tapa. Dejar cocer durante 2 horas a fuego lento.
Mientras tanto, cuece los huevos, empezando con agua fría, y luego 10 minutos desde la ebullición.
Cuando la carne haya cocido durante 2 horas, añadir los huevos duros sin cáscara.
Dejar cocer otros 20 minutos.
Servir con arroz normal y, si se quiere, un poco de kailan o pak choi escaldado en agua durante 5 minutos.
