Lu Rou Fan, porc braisé taïwanais

Un délicieux porc braisé qui nous vient de Taïwan. La recette est vraiment ultra simple à réaliser, il y aura juste quelques ingrédients à se procurer en épicerie asiatique. Ingredients

1 kg de poitrine de porc avec peau ou sans (moi c’était sans)
10 gousses d’ail
4 cuillerées à soupe d’échalotes frites
4 cuillerées à soupe de vergeoise brune
2 cuillerées à café de 5 parfums
4 cuillerées à soupe de vin chinois de cuisine (shaoxing)
1 litre d’eau
150 ml de sauce de soja claire
4 œufs durs

Instructions

Coupez la viande en petits morceaux.
Versez-la dans une cocotte et faites chauffer sur feu fort.
Quand la viande partait plus cuite ou se colore légèrement, ajoutez l’ail finement haché ou pressé au presse-ail.
Voici les échalotes frites. Ajoutez-les sur le porc.
Versez également le « 5 parfums » et la vergeoise brune.
Versez le vin chinois de cuisine.
L’eau et la sauce soja.
C’est tout ! Portez à ébullition puis baissez le feu avec le couvercle. Laissez cuire 2 heures sur feu doux.
Pendant ce temps faites cuire les œufs, départ à l’eau froide, puis 10 minutes à partir de l’ébullition.
Quand la viande a cuit 2 heures, ajoutez les œufs durs écalés.
Laissez cuire 20 minutes de plus.
Servez avec un riz nature et si vous le souhaitez, un peu de kaïlan ou de pak choï blanchi à l’eau 5 minutes.

For 6 to 8 people:

1kg of pork belly with skin or without (I was without)
10 cloves of garlic
4 tablespoons of fried shallots
4 tablespoons of brown vergeoise
2 teaspoons of 5 flavors
4 tablespoons of Chinese cooking wine (shaoxing)
1 liter of water
150ml of clear soy sauce
4 hard-boiled eggs

Cut the meat into small pieces.

Pour it into a casserole dish and heat over high heat.

When the meat is more cooked or slightly colored, add the finely chopped or pressed garlic.

Here are the fried shallots.

Add them to the pork.

Also pour in the “5 flavors” and the brown vergeoise.

Pour the Chinese cooking wine.

Water and soy sauce.

That’s all ! Bring to a boil and then lower the heat with the lid on. Let cook for 2 hours on low heat.

In the meantime, cook the eggs, starting in cold water, then 10 minutes from boiling.

When the meat has cooked for 2 hours, add the shelled hard-boiled eggs.

Cook for an additional 20 minutes.

Serve with plain rice and, if you like, a little kailan or pak choi blanched in water for 5 minutes.
