Por extraño que pueda parecerme, hace 13 años que no publico una receta de lemoncurd sencilla en mi blog de cocina. Así que ya está hecho, y hay una buena razón por la que lo pongo hoy, porque muy pronto voy a ofrecerte una nueva receta que lo contiene, ¡y es una auténtica bomba! El lemoncurd es rápido y fácil de hacer en casa.
Para 850 g de lemoncurd :
250g de azúcar
4 huevos
4 yemas de huevo
160 g de zumo de limón (unos 4 limones, pero pesa)
la ralladura de 4 limones sin tratar
125 g de mantequilla blanda
Pon el azúcar, 4 huevos y 4 yemas (en la foto, empecé con la mitad), el zumo de limón y la ralladura de 3 limones (ecológicos) en un cazo.
Mézclalo todo y caliéntalo removiendo a fuego lento.
La mezcla se espesará (¡es más seguro utilizar un termómetro!) a unos 80°C. Es como un flan, ¡no debes dejar que hierva!
Apaga el fuego y añade la mantequilla blanda. Mezclar bien.
Para obtener una cuajada de limón suave: tritúralo todo con una batidora de inmersión.
A continuación, pásalo por un colador bastante fino.
Remueve de nuevo, y luego filtra hasta que se enfríe por completo.
Enfríalo hasta que lo vayas a utilizar. Puedes conservarlo en el frigorífico durante 4-5 días.
Placez le sucre, les 4 œufs et les 4 jaunes (sur la photo, j’avais commencé avec la moitié), le jus de citron et les zestes de 3 citrons (bio) dans une casserole.
Mélangez le tout et faites chauffer tout en mélangeant sur feu doux.
Le mélange va épaissir (avec un thermomètre c’est plus sûr !) autour de 80°C. C’est comme pour une crème anglaise, il ne faut pas laisser bouillir !
Coupez le feu et ajoutez le beurre doux. Mélangez bien.
Pour avoir un lemon curd bien lisse : mixez le tout avec un mixeur plongeant.
Puis passez à travers un tamis assez fin.
Mélangez de nouveau puis filmez au contact jusqu’au complet refroidissement
Mettez ensuite au frais jusqu’à utilisation. Vous pouvez le garder 4-5 jours au réfrigérateur.
