Por mais estranho que possa parecer, há 13 anos não publico uma receita de coalhada de limão simples em meu blog de culinária. Então, ela está pronta e há um bom motivo para eu colocá-la aqui hoje, porque muito em breve vou oferecer a você uma nova receita que a contém, e ela é uma verdadeira bomba! O coalho de limão é rápido e fácil de fazer em casa.
Para 850 g de coalhada de limão:
250g de açúcar
4 ovos
4 gemas de ovo
160 g de suco de limão (cerca de 4 limões, mas pese)
As raspas de 4 limões não tratados
125 g de manteiga macia
Coloque o açúcar, 4 ovos e 4 gemas (na foto, comecei com a metade), o suco de limão e as raspas de 3 limões (orgânicos) em uma panela.
Misture tudo e aqueça em fogo baixo, mexendo sempre.
A mistura engrossará (é mais seguro usar um termômetro!) a cerca de 80°C. É como um creme, você não deve deixá-lo ferver!
Desligue o fogo e adicione a manteiga amolecida. Misture bem.
Para obter uma coalhada de limão homogênea: bata tudo com um liquidificador de imersão.
Em seguida, passe por uma peneira bem fina.
Mexa novamente e, em seguida, filtre até esfriar completamente.
Em seguida, leve à geladeira até que você esteja pronto para usar. Você pode mantê-lo na geladeira por 4 a 5 dias.
Placez le sucre, les 4 œufs et les 4 jaunes (sur la photo, j’avais commencé avec la moitié), le jus de citron et les zestes de 3 citrons (bio) dans une casserole.
Mélangez le tout et faites chauffer tout en mélangeant sur feu doux.
Le mélange va épaissir (avec un thermomètre c’est plus sûr !) autour de 80°C. C’est comme pour une crème anglaise, il ne faut pas laisser bouillir !
Coupez le feu et ajoutez le beurre doux. Mélangez bien.
Pour avoir un lemon curd bien lisse : mixez le tout avec un mixeur plongeant.
Puis passez à travers un tamis assez fin.
Mélangez de nouveau puis filmez au contact jusqu’au complet refroidissement
Mettez ensuite au frais jusqu’à utilisation. Vous pouvez le garder 4-5 jours au réfrigérateur.
