قد يبدو الأمر غريبًا بالنسبة لي، لم أنشر وصفة لخبز الليمون البسيط على مدونتي للطبخ منذ 13 عامًا. لقد تم ذلك، وهناك سبب وجيه لطرحه اليوم، لأنني سأقدم لكم قريباً جداً وصفة جديدة تحتوي عليه، وهي وصفة رائعة حقاً! خثارة الليمون سريعة وسهلة التحضير في المنزل.
للحصول على 850 جرام من الليمون الرائب :
250 جرام سكر
4 بيضات
4 صفار بيض
160 جرام عصير ليمون (حوالي 4 ليمونات، لكن بوزن)
قشر 4 حبات ليمون غير معالج
125 جرام زبدة غير مملحة
ضعي السكر و4 بيضات و4 صفار (في الصورة، بدأت بالنصف) وعصير الليمون وقشر 3 حبات ليمون (عضوي) في قدر.
يُخلط كل شيء معًا ويُسخن مع التقليب على نار هادئة.
سوف يتكاثف الخليط (من الآمن استخدام مقياس الحرارة!) عند حوالي 80 درجة مئوية. إنه مثل الكاسترد، يجب ألا تتركه يغلي!
أطفئي النار وأضيفي الزبدة الطرية. اخلط جيدا.
للحصول على خثارة ليمون ناعمة: يُمزج كل شيء بخلاط غمر.
ثم مرر من خلال منخل ناعم إلى حد ما.
يُحرّك المزيج مرة أخرى ثم يُصفّى حتى يبرد تماماً.
ثم يبرد حتى يصبح جاهزاً للاستخدام. يمكنك الاحتفاظ بها في الثلاجة لمدة 4-5 أيام.
Placez le sucre, les 4 œufs et les 4 jaunes (sur la photo, j’avais commencé avec la moitié), le jus de citron et les zestes de 3 citrons (bio) dans une casserole.
Mélangez le tout et faites chauffer tout en mélangeant sur feu doux.
Le mélange va épaissir (avec un thermomètre c’est plus sûr !) autour de 80°C. C’est comme pour une crème anglaise, il ne faut pas laisser bouillir !
Coupez le feu et ajoutez le beurre doux. Mélangez bien.
Pour avoir un lemon curd bien lisse : mixez le tout avec un mixeur plongeant.
Puis passez à travers un tamis assez fin.
Mélangez de nouveau puis filmez au contact jusqu’au complet refroidissement
Mettez ensuite au frais jusqu’à utilisation. Vous pouvez le garder 4-5 jours au réfrigérateur.
