El otoño está aquí y se me antojó un dulce de chocolate y una crema de castañas. ¡Voy a publicar mi receta que no da un fondant sino un ultra fondant! Este pastel no contiene harina y se mantiene perfectamente gracias al largo y suave proceso de cocción. Para disfrutar en rodajas finas.
Receta del ultra fondant con crema de chocolate y castañas :
-150g de chocolate negro
-50g de mantequilla semi-salada
-80g de mantequilla blanda
-500g de crema de castañas (no el puré)
-4 huevos
-40g de azúcar glas
Instrucciones:
Precaliente el horno a 150°C. Derretir las mantecas con el chocolate en el microondas o al baño María.
Poner la crema de castañas en un bol grande. Os recuerdo que es la crema dulce y no el puré de castañas.
Añadir los huevos y mezclar bien.
Verter el chocolate derretido y la mantequilla.
Y también azúcar glas. Mezclar hasta obtener una pasta suave.
Forrar un molde desmontable de 20 cm de diámetro con un borde desmontable. También puedes utilizar un molde normal de 20 cm, pero será un poco más difícil de desmoldar. Si quieres un fondant más fino, utiliza un molde de 22 cm.
Vierta la masa.
Hornear durante 45 minutos. El pastel se hinchará y volverá a caer después de la cocción. Deje que se enfríe completamente antes de enfriar.
Sacar y servir en rodajas finas.
Fondant Ultra au Chocolat et Crème de Marrons
L’automne est bien là et j’avais une cruelle envie de fondant au chocolat et crème de marrons. Je vous poste donc ma recette qui donne non pas un fondant mais un ultra fondant !! Ce gâteau ne contient pas de farine et se tient parfaitement grâce à une cuisson longue et assez douce. À déguster en fines tranches !
Préchauffez votre four à 150°C.Mettez les beurres avec le chocolat à fondre au four à micro-ondes ou au bain-marie.
Mettez la crème de marrons dans un grand bol. Je vous rappelle que c’est la crème sucrée et non la purée de marrons.
Ajoutez les œufs et mélangez bien.
Versez le chocolat et le beurre fondus.
Et également le sucre glace. Mélangez pour obtenir une pâte bien lisse.
Chemisez un moule à manqué à bord amovible de 20cm de diamètre. Vous pouvez également prendre un moule normal de 20cm mais le démoulage sera un peu plus délicat. Si vous souhaitez un fondant plus fin, prenez alors un moule de 22cm.
Versez la pâte.
Enfournez et laissez cuire 45 minutes. Le gâteau va gonfler puis retomber après cuisson. Laissez-le refroidir totalement avant de le mettre au frais.
