Fondant Ultra au Chocolat et Crème de Marrons

L’automne est bien là et j’avais une cruelle envie de fondant au chocolat et crème de marrons. Je vous poste donc ma recette qui donne non pas un fondant mais un ultra fondant !! Ce gâteau ne contient pas de farine et se tient parfaitement grâce à une cuisson longue et assez douce. À déguster en fines tranches !

Ingredients

150 g chocolat noir
50 g beurre demi-sel
80 g beurre doux
500 g crème de marrons (ce n’est pas la purée)
4 œufs
40 g sucre glace

Instructions

Préchauffez votre four à 150°C.Mettez les beurres avec le chocolat à fondre au four à micro-ondes ou au bain-marie.
Mettez la crème de marrons dans un grand bol. Je vous rappelle que c’est la crème sucrée et non la purée de marrons.
Ajoutez les œufs et mélangez bien.
Versez le chocolat et le beurre fondus.
Et également le sucre glace. Mélangez pour obtenir une pâte bien lisse.
Chemisez un moule à manqué à bord amovible de 20cm de diamètre. Vous pouvez également prendre un moule normal de 20cm mais le démoulage sera un peu plus délicat. Si vous souhaitez un fondant plus fin, prenez alors un moule de 22cm.
Versez la pâte.
Enfournez et laissez cuire 45 minutes. Le gâteau va gonfler puis retomber après cuisson. Laissez-le refroidir totalement avant de le mettre au frais.
Démoulez et servez en fines tranches !

Fall is here and I was craving chocolate fudge and chestnut cream. I post my recipe which gives not a fondant but an ultra fondant ! This cake contains no flour and holds together perfectly thanks to the long and gentle baking process. To be enjoyed in thin slices!

Recipe of the ultra fondant with chocolate and chestnut cream :

-150g of dark chocolate

-50g of semi-salted butter

-80g of soft butter

-500g of chestnut cream (this is not the purée)

-4 eggs

-40g of powdered sugar

Instructions:

Preheat your oven to 150°C.
Melt the butters with the chocolate in a microwave oven or double boiler.

Put the chestnut cream in a large bowl. I remind you that it is the sweet cream and not the chestnut purée.

Add the eggs and mix well.

Pour in the melted chocolate and butter.

And also the powdered sugar. Mix to a smooth paste.

Line a 20cm diameter springform pan with a removable rim. You can also use a normal 20cm mould but the unmoulding will be a bit more delicate. If you want a thinner fondant, then use a 22cm mold.

Pour in the dough.

Bake in the oven for 45 minutes. The cake will puff up and then fall back down after baking. Let it cool completely before chilling.

Turn out and serve in thin slices!
