La saison des figues a commencé depuis un moment (tout dépend du pays et des figues concernées) et j’avais très envie de vous proposer une recette de tarte très fine. Aucune difficulté particulière dans ma recette. Il y a sur la pâte, une fine couche de pâte de noisettes et je vous propose ici une manière originale pour la placer sans aucune difficulté. Il n’y a besoin ici que de deux cercles différents (ou même deux assiettes ou plats) pour obtenir une tarte parfaitement calibrée!
Préparer la pâte sucrée: Mettre la poudre d’amande, le sucre glace, la farine, le sel et le beurre en morceaux dans le bol du pétrisseur.
Sabler le mélange pour incorporer le beurre avec le « k » du robot. Ou bien à la main!
Ajouter l’œuf battu en avance et mélanger juste pour incorporer celui-ci, mais pas plus!
Mettre une boule de pâte sur un papier sulfurisé et mettre une deuxième feuille de papier sur celle-ci. Étaler avec le rouleau sans ajout de farine, tout reste propre!!
Couper avec un cercle de 18cm.
Mettre dans un bol, la poudre de noisettes et le sucre.
Ajouter l’oeuf.
Bien mélanger: c’est prêt!
Mettre la boule de pâte sur un papier sulfurisé parsemé de sucre glace. Saupoudrer de sucre glace et étaler avec un rouleau à pâtisserie.
Étaler finement, puis couper avec un cercle de 16cm.
Enlever le surplus de pâte autour du cercle. Avec le papier, poser le disque de noisettes sur le disque de pâte. Puis décoller comme une décalcomanie.
On obtient un cercle parfait de pâte avec un beau disque de pâte de noisettes. Facile!
Couper les figues en morceaux. Je coupe chaque quartier en trois.
Parsemer de figues la tarte fine.
Saupoudrer de sucre glace.
Cuire à 180°C pendant une bonne vingtaine de minutes. Il faut vérifier et adapter à son propre four. La pâte doit être bien dorée et les figues doivent rendre leur jus qui caramélise légèrement.
