Lors de mon voyage en Irlande (que vous pouvez lire ICI), j’ai découvert des sablés identiques, au citron et avec de la farine de maïs. Cette dernière apporte une consistance inédite et un petit craquant supplémentaire. Ils ont un délicieux goût de beurre et sont parfaitement croustillants. Un délice pour accompagner un sorbet au citron !
Mettez le sucre et le beurre dans la cuve de votre robot ou dans un récipient.
Ajoutez le zeste de citron. Pour 15g, c’est à peu près le zeste d’un gros citron.
Ajoutez aussi la vanille et le sel.
Mélangez avec la feuille du robot ou avec une cuillère pour obtenir une sorte de crème.
Ajoutez la farine et la farine de maïs. Vous la trouverez dans les supermarchés bio. C’est bien de la farine de maïs et non de la semoule à polenta.
Mélangez de nouveau juste pour avoir une pâte homogène, pas plus.
Ramenez la pâte en boule.
Prenez une moitié de pâte. Étalez-la sur un papier sulfurisé. Si vous avez un rouleau à pâtisserie à motifs, farinez légèrement la surface.
Puis passez le rouleau. Il est évident que vous pouvez vous passer de ce genre d’ustensile et réaliser les sablés sans celui-ci. Si vous prenez un rouleau à motif, n’étalez pas trop la pâte avant de passer de passer le motif car ce dernier va aussi étaler de nouveau.
Coupez des sablés à l’emporte-pièce.
Posez les sablés sur une plaque à pâtisserie. J’ai ici utilisé le tapis air mat de Silikomart. Il est perforé et permet aux sablés de ne pas gonfler. Faites de même pour le reste de pâte.
