Une recette très simple à faire pour un goût vraiment incroyable. Le mieux est de servir ce pesto sur du pain frais. C’est un délice et le goût de l’aubergine rôtie est bien mis en valeur avec le parmesan et les pignons. Vous pourrez aussi le servir avec des pâtes, comme un pesto classique. Visuellement cela ressemble beaucoup à un caviar d’aubergine classique, mais les saveurs sont tellement différentes que vous allez surprendre vos invités !
Placez les deux aubergines dans un papier d’aluminium comme pour une papillote.
Placez-les sur une plaque à pâtisserie et mettez-les au four préchauffé à 180°C pendant 45 minutes.
Laissez-les tiédir dans le papier avant d’ouvrir.
Enlevez la peau et ne passez pas les aubergines sous l’eau !
Cela enlèverait leur goût ! Placez la chair d’aubergine dans une petite passoire pour laisser le jus s’égoutter au maximum. À ce stade, j’avais 300g de chair.
Laissez égoutter 15 minutes puis mettez la chair dans un mixeur avec le reste des ingrédients.
Poivrez à votre goût et ne salez pas trop (le parmesan est déjà bien salé !).
Mixez pour avoir une texture plus lisse et goûtez !
Vous pouvez ajouter des pignons de pin.
Servez tel quel pour tartiner sur du bon pain ou utilisez le pesto dans des pâtes.
