L’été avance à grands pas et il faut encore en profiter. Et quoi de plus estival qu’une quiche pleine de tomates cerises gorgées de soleil?! Avec du Sainte Maure et des tomates séchées marinées à l’huile d’olive, le tout dans une pâte maison bien beurrée, vous aurez la quiche parfaite ! Croustillante, riche, fondante.
Préparez la pâte en mettant la farine et le beurre demi-sel en morceaux dans la cuve de votre robot ou dans un récipient.
Mélangez avec la feuille ou du bout des doigts pour avoir une sorte de mélange sableux.
Ajoutez l’œuf et l’eau.
Mélangez de nouveau pour avoir une pâte homogène.
Sans attendre (sauf si il fait très chaud !) étalez la pâte avec un peu de farine sur un papier sulfurisé.
Pour cette recette, j’ai pris un cadre de 23 sur 9cm. Vous pouvez aussi prendre un moule classique ou un moule à cake. Graissez-le un peu avec un bombe de démoulage ou du beurre. Posez-le sur une plaque garnie de papier sulfurisé.
Placez la pâte en essayant d’adhérer le plus possible au cadre, et d’avoir un angle droit dans le fond.
Coupez le surplus au couteau. Mettez au frais le temps de faire la suite.
Mélangez la crème liquide entière et les œufs, salez et poivrez à votre goût.
Coupez les tomates séchées marinées à l’huile d’olive en morceaux. Ne les essuyez pas si il y a de l’huile. Ce sera encore meilleur !!
Hop dans la migaine.
Saupoudrez d’origan et de romarin.
Découpez le Sainte Maure (de Touraine) en morceaux, en enlevant le brin de paille !
Direction la migaine. mélangez bien.
Versez dans la pâte.
Prenez une grappe de tomates cerises et posez-la dans la quiche.
Avec tout le fromage et les tomates séchées au fond, elles resteront au dessus.
Faites cuire 1 heure à 180°C.
Glissez sur une grille à pâtisserie et décadrez délicatement.
Laissez refroidir et dégustez avec un bonne salade. Un délice tiède ou froide.
