Je reviens du Japon où j’ai dégusté ces merveilleux petits beignets de poulet. Le kaarage est une technique de friture où l’élément est jeté dans la farine ou la fécule, avant d’être cuit à la friture. Il peut donc y avoir du karaage de poulet, mais aussi de poisson etc. Aussi simple que cela puisse paraitre, j’ai été confronté à un souci inattendu: le beignet n’avait pas la texture et le croustillant souhaités. J’ai dû m’y reprendre plusieurs fois en essayant avec la farine de riz, la fécule de pomme de terre, la maïzena et la farine. Pour finalement opter pour un mélange des trois dernières. Et cette fois le karaage de poulet est comme je voulais. Un fine couche bien craquante qui renferme un poulet très tendre et parfumé. Comme quand je l’ai dévoré à Tokyo.
Pour cette recette, prenez des hauts de cuisses. Ils resteront bien moelleux même après la friture.
Enlevez la peau et l’os central. Assurez-vous bien de ne pas avoir de cartilage.
Coupez les hauts de cuisses en 4 ou 6 morceaux.
Mettez tous les morceaux dans un récipient. Versez la sauce de soja.
Le mirin (vous pouvez vous en passer si vous n’en trouvez pas !).
Le sucre.
Ajoutez également l’ail haché.
Et râpez votre gingembre.
Mélangez bien et laissez reposer le tout pendant 1 heure au frais. Dans un grand récipient, mélangez la farine, la maïzena et la fécule de pomme de terre.
Jetez-y un morceau de poulet (avec un peu de marinade). Je dépose le morceau avec une cuillère pour être sûr d’avoir un tout peu de marinade avec, le liquide et la « farine » vont donner une très fine couche de pâte.
Secouez le morceau dans la « farine » et posez-le à côté.
Faites de même pour tous les morceaux. Faites chauffer une casserole d’huile à 180°C puis faites-y dorer les bouchées.
Quand le karaage est bien coloré, déposez-le sur une papier absorbant en attendant de cuire la suite. Dégustez aussitôt avec un peu de citron.
