Je vous propose une recette de mi-saison. Bien qu’il fasse très beau, les températures sont encore basses. Alors pourquoi ne pas se faire un dessert avec des notes d’hiver et des fruits d’été? J’ai pris ici des fruits congelés, mais vous pourrez le refaire avec des fruits frais. Je prépare un coulis de fruits assez peu sucré que j’épaissis grâce à un ingrédient très connu. Cela vous évitera d’avoir un crumble détrempé et vous garderez donc tout le croustillant de la pâte aux flocons d’avoine.
Dans un récipient, versez le sucre de canne, la farine, les flocons d’avoine et la cannelle.
Mélangez puis ajoutez le beurre à température ambiante.
Mélangez juste assez pour avoir un mélange sableux.
Coupez les amandes en tranches.
Mettez-les dans la pâte à crumble.
Rassemblez la pâte en une boule. Si vous la pressez fort, elle s’agglomère, puis peut se casser en plus petits morceaux.
Versez les fruits rouges choisis. J’ai pris ici des fruits congelés. Mais vous pouvez bien entendu prendre des fruits frais, et une seule sorte plutôt qu’un mélange.
Versez le sucre et l’eau, portez à ébullition. Faites cuire 4-5 minutes.
Dans un petit bol, versez la maïzena avec juste assez d’eau pour la dissoudre.
Mélangez bien et versez le tout dans la casserole, tout en mélangeant à la cuillère.
Portez de nouveau à ébullition. Le tout passe d’une consistance de coulis, à celui d’une confiture.
Laissez refroidir hors du feu. Vous pouvez continuer la recette le lendemain en mettant la pâte à crumble et les fruits cuits au frais. Versez la préparation aux fruits rouges dans un plat à gratin.
Étalez uniformément.
Placez la pâte à crumble en faisant des morceaux de toutes les tailles.
Faites cuire à 180°C une vingtaine de minutes (ou plus) pour avoir un crumble bien doré. À déguster tiède…
