Il y a un peu plus d’un an et demi, je vous avais donné la recette de mon cake ultime au citron qui a visiblement beaucoup plu (recette ICI) ! Vous aviez apparemment apprécié sa texture très particulière et sa saveur très citronnée. J’ai fait quelques expériences à l’aveugle pour tenter le même genre de résultat avec cette fois les châtaignes dont je suis friand. Le cake est à base de farine, de farine de châtaignes et de crème de marrons et donnera un cake délicieux. Grâce à sa texture, les tranches se découperont parfaitement et il gardera tout son moelleux plusieurs jours si vous l’emballez bien.
Faites fondre le beurre au four à micro-ondes ou au bain-marie.
Dans un récipient, mélangez le beurre fondu, le sucre et les œufs. Note de Bernard: Pour les œufs sur la photo, n’en tenez pas compte. Je fais mes recettes à l’instinct et je prends mes photos à un moment où les ingrédients ne sont pas forcément définitifs. Par exemple, j’ai ajouté de l’œuf juste avant de mettre au four, il y a donc bien 145g d’œuf et non juste deux œufs ! Cassez 3 œufs que vous battez dans un bol et versez la bonne quantité dans votre récipient posé sur une balance.
Je vous rappelle que pour cette recette il s’agit de crème de marrons sucrée !
Ajoutez la crème de marrons.
Puis terminez avec la farine, la farine de châtaigne et la levure chimique.
Vous obtenez alors une belle pâte.
Versez-la dans le moule à cake chemisé de papier sulfurisé.
Faites cuire à 180°C pendant 35 à 45 minutes. Surveillez bien la cuisson et adaptez-la à votre propre four. La lame d’un couteau doit en ressortir bien sèche ! Le cake va gonfler tout en restant assez plat, comme pour le cake ultime au citron. C’est exactement ce que je voulais.
Démoulez le cake sur une grille à pâtisserie puis laissez-le refroidir. Conservez-le dans du film étirable.
