Des sablés à la forme rustiques, faits à la main et trempés dans du chocolat au lait. Un savoureux mélange de saveurs et une texture très croustillante pour ces petits gâteaux à la farine de riz complet et donc sans gluten. Une option pour ceux qui y sont sensibles (ce qui n’est pas mon cas). Mais même sans vouloir éviter le gluten, c’est aussi une occasion de cuisiner avec des ingrédients inhabituels. Ces sablés sont recouverts de chocolat au lait les mettant à l’abri de l’air, ce qui permet de les conserver plus longtemps.
Versez les noisettes hachées (ou des amandes, ou encore des cacahuètes !) dans un plat et faites griller 9-10 minutes à 180°C.
Faites bien attention à ne pas les brûler !
Dans un bol, mettez le sucre roux et le beurre. Malaxez pour obtenir une pâte.
Versez le miel et l’huile de colza.
Ajoutez également les 40g d’œuf.
Mélangez bien puis ajoutez la farine de riz complet et le bicarbonate.
Mélangez à la main. Comme il n’y a pas de gluten, peu importe si vous mélangez trop ou non. Ajoutez les 60g de noisettes hachées grillées.
Pesez des boules de 30g.
Roulez-les en des petits boudins.
Puis aplatissez-les avec la paume de votre main. Faites de même pour tous les sablés.
Faites cuire à 175°C pendant 25 minutes. Surveillez bien et adaptez à votre propre four.
Laissez-les refroidir sur une grille à pâtisserie.Faites fondre le chocolat au lait. J’ai pris ici du Valrhona Jivara.
Pour ma part, je le tempère avec du beurre de cacao mycryo pour éviter qu’il ne blanchisse. Vous trouverez la méthode ICI. Plongez chaque biscuit dans le chocolat fondu.
Enlevez l’excédent avec deux fourchettes.
Puis posez-les sur un papier sulfurisé.
Dispersez le reste des noisettes hachées sur le dessus des biscuits.
Laissez durcir à température ambiante. Gardez-les en boite hermétique !
