Como um desejo de apanhar sol no seu prato? Recentemente fiz um grande buffet frio para amigos, e fiz este húmus de lentilhas de coral e batata-doce. Um verdadeiro deleite que foi um enorme sucesso! Todos saltaram para cima dela. Portanto, sim, oficialmente não é hummus porque não há grão-de-bico. Mas penso que hoje em dia todos compreendem o húmus pela sua consistência e pelo facto de ser um puré de gergelim misturado com legumes cozidos. Esta tornou-se rapidamente uma das minhas favoritas! Para fazer e voltar a fazer este Verão…
Receita para 6 pessoas :
550g de lentilhas de coral (peso quando cozinhadas), cerca de 300g cru
200g de batata doce (mesmo: peso após cozedura)
120g de tahini (puré de sésamo)
50g de óleo de colza
180g de leite de coco
3 colheres de sopa de sumo de lima
1 colher de chá de vinagre branco
1/4 colher de chá de curcuma em pó
1/4 colher de chá de gengibre em pó
1 pequeno grupo de coentros
sal, pimenta
Instruções:
Cozinhar as batatas doces. Basta descascá-los e cortá-los em pedaços.
Vapor durante 15-20 minutos.
Basta verificar a cozedura com uma faca.
Cozer as lentilhas de coral durante 4-5 minutos em água com sal a ferver.
Verter as lentilhas para um escorredor e polvilhar com água fresca até arrefecer. Esvaziar bem e verter para um liquidificador. Acrescentar o tahini.
Batata doce.
Mas também o óleo, o leite de coco, as especiarias (sal e pimenta a seu gosto) e o pequeno ramo de coentros. Não esquecer o sumo de lima e o vinagre branco.
Misturar e adicionar um pouco de água para atingir a consistência desejada. Isto pode variar entre 50 e 100ml. Mas a decisão é sua. Misturar até ter um creme suave.
Verter em recipientes e chuviscar com azeite. Para ser apreciado no pão.
