Se tiverem o meu primeiro livro “Les desserts de Bernard”, devem ter reparado nas minhas receitas de macarronadas, que são as que dou nos meus workshops. E talvez tenham visto o meu maravilhoso ganache de baunilha? Dou-lhes sistematicamente um gostinho durante as minhas aulas e os alunos adoram-no sempre. Queria encontrar esta sensação em pequenos potes de creme com a mesma cremosidade dos cremes de caramelo de Clo. E com a adição de framboesas frescas, é realmente incrivelmente doce. Uma textura perfeita e um sabor fresco e encantador, apresento-vos a minha última pequena loucura para vos fazer esquecer os fatos de banho deste Verão!
Receita para 6 cremes maravilhosos:
30g de açúcar
1 vagem de baunilha
250ml de creme completo
250ml de leite
80g de gema de ovo
220g de chocolate branco (Valrhona ivory couverture)
2+1/4 folhas de gelatina
250g de framboesas frescas
Comece por esvaziar o interior da vagem de baunilha nas gemas misturadas com 15g de açúcar.
Entretanto, levar o leite, o cravinho vazio, o creme e os restantes 15g de açúcar a lume brando.
Bater as gemas/sugar/vanilla juntas para branquear e espumar o mais possível. Como não há muito açúcar, não branqueará assim tanto.
Verter o líquido sobre a mistura espumosa enquanto se mistura.
Devolver a mistura à panela em lume brando e, enquanto se mexe, levar a mistura a 88°C. Portanto, é um creme que estás a fazer, muito menos doce.
O creme deve ser bem revestido.
Retirar do calor (pode desligá-lo!) e adicionar as folhas de gelatina embebidas e enrugadas.
Depois o chocolate branco. Usei a couverture Valrhona Ivory.
Despejar o calor e misturar bem. Se houver um problema com a aparência, pode usar uma varinha mágica.
É isso mesmo! Deixar arrefecer até à temperatura ambiente, mexendo ocasionalmente.
Porquê deixá-lo arrefecer? Porque senão as framboesas vão cozinhar! Colocar framboesas frescas em pequenos ramequins.
E verter o creme por cima.
Deixar no frigorífico durante pelo menos 4 horas antes de servir.
