إذا كان لديك كتابي الأول “Les desserts de Bernard” ، فربما تكون قد لاحظت وصفات المعكرونة التي أعطيها خلال ورش العمل الخاصة بي. وربما رأيت غاناش الفانيليا الرائع؟ لقد تذوقته بشكل منهجي خلال دروسي وفي كل مرة يحبها الطلاب. أردت أن أجد هذا الإحساس مرة أخرى في عبوات صغيرة من الكريمة بنفس القوام الكريمي كما في كريمات الكراميل في كلو . وعن طريق إضافة توت العليق الطازج ، فإنه حقًا حلو بشكل لا يصدق. قوام مثالي وطعم منعش وآسر ، أقدم لكم أحدث جنوني الصغير لتجعلكم تنسون ملابس السباحة لهذا الصيف!
وصفة لستة كريمات رائعة:
30 جرام سكر
1 حبة فانيليا
250 مل كامل الدسم
250 مل من الحليب
80 جرام صفار بيض
220 جرام شوكولاتة بيضاء (فالرونا عاجي كوvرتور)
2 + 1/4 رقائق جيلاتين
250 جرام من توت العليق الطازج
ابدأ بإفراغ الجزء الداخلي من جراب الفانيليا في صفار البيض الممزوج بـ 15 جرامًا من السكر.
في هذه الأثناء ، يُغلى الحليب والقرن المفرغ والقشدة و 15 جرامًا المتبقية من السكر على نار خفيفة.
اخفقي الصفار / السكر / الفانيليا بمضرب بيض حتى يصبح رغويًا قدر الإمكان. نظرًا لعدم وجود الكثير من السكر ، فلن يبيض كثيرًا.
يُسكب السائل فوق المزيج الرغوي أثناء الخلط.
صب كل شيء مرة أخرى في القدر على نار خفيفة وأثناء التحريك ، احضر كل شيء إلى 88 درجة مئوية. لذلك فهو الكاسترد الذي تصنعه ، ببساطة أقل حلاوة.
يجب أن يكون الكريم ناعمًا.
ارفعيها عن النار (يمكنك إطفاءها!) أضيفي أوراق الجيلاتين المنقوعة والمصفاة.
ثم الشوكولاته البيضاء. لقد استخدمت غطاء عاجي من فالرونا.
ارفعي النار واخلطي جيدًا. إذا كان هناك قلق بشأن المظهر ، يمكنك استخدام خلاط الغمر.
لذا ! اتركيها تبرد حتى تصل إلى درجة حرارة الغرفة مع التحريك من حين لآخر.
لماذا تبرد؟ وإلا فإن التوت سوف يطبخ !! ضعي التوت الطازج في سلطانيات صغيرة.
ونسكب الكريم فوقها.
اتركيه في الثلاجة لمدة 4 ساعات على الأقل قبل الاستمتاع …
