Voltei de outra pequena viagem a Nova Iorque onde regressei ao Zabar’s (podem ver o pequeno relatório que fiz há algum tempo AQUI). Há muitos anos, descobri a babka de canela, uma espécie de pão de origem polaca, mas que é uma tradição judaica aqui quando é enrolada nesta forma e encimada por canela. Depois de comprar muitos deles, decidi fazer a receita para o blog, com como sempre várias tentativas para obter o resultado que tinha em mente. O resultado é perfeito para mim: é denso e no entanto macio como pode ser, com um delicioso sabor a canela!
Receita para uma lata de bolo de 28cm:
Colar :
350g de farinha
55g de açúcar
60g de ovo
40g de gema de ovo (2 gemas grandes)
4g de levedura seca
135g de leite semi-desnatado
1 colher de chá de baunilha líquida
125g de manteiga semi-salgada
Interior de canela:
210g de vergeoise castanha
55g de manteiga semi-salgada derretida
15g canela
1 ovo de 50g
Streusel :
75g de farinha
75g de açúcar
1/2 colher de chá de canela
45g de manteiga semi-salgada
1 pequena quantidade de ovo batido para colar o streusel
Instruções:
Colocar todos os ingredientes para a massa, excepto a manteiga, no processador de alimentos e misturar com o gancho da massa.
Quando a massa estiver lisa, adicionar a manteiga.
Desta vez deixá-lo amassar durante 9-10 minutos. A massa deve ser lisa.
Cobrir com película aderente e deixar subir durante 1? horas num forno a 40°C ou num local quente.
Assim que a massa tiver crescido, desgaseificá-la esmagando-a, embrulhá-la bem novamente e deixá-la no frigorífico durante pelo menos 3 horas.
Depois deste tempo, a massa está fria. Colocá-lo sobre uma superfície de trabalho enfarinhada.
Espalhá-la finamente sobre uma superfície de 40cm por 60cm. Se o rectângulo não for perfeito, não faz mal!
Misturar os ingredientes a partir do interior com a canela.
Espalhar a totalidade da massa por toda a superfície.
Enrolar a massa.
Assim que se tiver uma salsicha, junte as duas pontas.
Em seguida, imprimir uma rotação dupla ou tripla. Colocá-lo na forma do bolo forrado com papel vegetal.
Misturar os ingredientes para o streusel.
Pode fazer isto com a ponta dos dedos até que tenha a consistência de esmigalhar.
Pincele a superfície da massa com um pouco de ovo batido.
Colocar o streusel sobre a superfície e pressionar ligeiramente com a palma de uma mão.
Cozer a 170°C durante 40-45 minutos, adaptando-se sempre ao seu próprio forno. O babka deve levantar-se bem e o streusel deve castanho.
Deixe-o arrefecer antes de comer!
