Las verduras estofadas en esta receta son patatas, berenjenas y pimientos verdes. Primero se cocinan por separado y luego se guisan en un wok.
Receta de «Verduras estofadas a la pekinesa» para 4 personas:
-2 patatas (unos 300 g en total) en trozos
-300g de trozos de berenjena
-400g de pimientos verdes en trozos (sin semillas)
-2 cucharadas de cebolla china finamente picada
-2 cucharadas de ajo picado
-2 cucharadas de salsa de soja clara
-2 cucharaditas de azúcar
-2 cucharadas de salsa de ostras
-2 cucharadas de vino de cocina chino
-600ml de agua
-2 buenas pizcas de sal
-aceite
Lavar bien las verduras. Cortar las patatas (con o sin piel). A fuego moderado, calienta el wok con 2 cucharadas de aceite. Añade las patatas y cocínalas por un lado hasta que tomen color.
Darles la vuelta y cocinar el otro lado. Cuando la segunda cara esté coloreada, retirar del wok y reservar.
Añadir otras 2 cucharadas de aceite y proceder de la misma manera con las berenjenas.
Luego con los pimientos (¡siempre con un poco de aceite!).
En el wok vacío, a fuego moderado, añadir 2 cucharadas de aceite, el ajo y la cebolleta. Cocinar hasta que se dore ligeramente.
Añadir agua, salsa de soja clara, salsa de ostras, azúcar, vino chino y sal.
Añade las patatas y tapa el wok. Después de 10 minutos, añadir las berenjenas. Tapar de nuevo y cocinar durante otros 10 minutos. Por último, añada los pimientos verdes. Tapar y cocinar hasta que el agua se haya evaporado y sólo quede una salsa ligeramente espesa. Servir inmediatamente.
